Welcome to 46 Super Easy Ice Pops and Popsicle Recipes! If you love the summer but hate making desserts because it is too hot, this book is perfect for you!
Ice pops are an excellent choice for a quick summer snack. You can make them quickly. The majority of the recipes in this book have less than 15 minutes of prep time, but they need to freeze overnight. Note: for the serving size, I put a range because it depends on the size of your ice pops mold. If your popsicle mold is smaller, these recipes will make 10 ice pops. For the bigger molds, it will be 6.
I wrote this book because I love teaching other people how to cook and bake. It can be so satisfying to learn how to make things from scratch. Although this is not technically baking, it still is a book of recipes that will create incredible desserts and super sweet treats to cool you down on a hot summer day. 1. Cherry Ice Pops
Cherry is one of the most common flavors of ice pops. If you are looking for something cool and refreshing but adds a touch of nostalgia, these cherry ice pops are a fabulous choice.
Makes: 6 10 servings
Prep Time: 15 minutes
Ingredients:
Instructions:
After washing and pitting the cherries, put them in the food processor. Process until smooth. Add in honey and lemon juice. Blend well.
Make sure they are a smooth consistency. If not, blend again.
Pour the cherry popsicle mixture into ice pop or popsicle molds. Add popsicle sticks.
Freeze for a minimum of 8 hours; overnight is best.
2. Triple Berry Ice Pops
If you are looking for a taste of summer in your ice pops, using 3 different berries should do the trick! Make these to enjoy on a warm summer day.
Makes: 6 10 servings
Prep Time: 15 minutes
Ingredients:
cup of raspberries
cup of blueberries
cup of strawberries
cup of lemon juice
cup of sugar
cup of water
Instructions:
Combine the water and the sugar in a saucepan. Bring to boil, and stir until all the sugar is dissolved. Set aside.
Wash all the fruit and pat dry. Sliced and hull the strawberries.
Place the fruits in a food processor or blender and pulse until smooth. This will only take 30 seconds to 1 minute. Add lemon juice and simple syrup (the water and sugar mixture) and blend until combined.
Pour triple berry ice pop mixture into ice pop or popsicle molds. Add popsicle sticks. Freeze the ice pops for at least 8 hours; overnight is best.
3. White Whole Berry Ice Pops
If you are looking for something a little different and with a creamy taste instead of just fruity, you will love these white berry ice pops.
Makes: 6 10 servings
Prep Time: 15 minutes

Instructions:
Warm-up cup of milk in the microwave. Stir in honey until blended.
Add in the vanilla extract and remaining milk. Stir until combined.
Stir in whole berries.
Pour whole berry ice pop mixture into ice pop or popsicle molds, be sure to get an even amount of fruit into each mold. Add popsicle sticks. Freeze the ice pops for at least 8 hours; overnight is best.
4. Blueberry Ice Pops
If blueberry is your favorite fruit and you love all baked goods with blueberries (pie, muffins, cake, etc.), you will really enjoy these simple ice pops.
