Hachee
Hachee is a beef and onion stew that is present in almost all Dutch homes.
It is a yummy and comforting dish that you will enjoy more on cold days.
The very tender meat and rich sauce give it a nice deep flavor.
Prep Time: 3 hours and 30 minutes
Serving Size: 6
Ingredients:
2 lb cubed beef (cut in half-inch pieces, blotted dry using a paper towel, and lightly seasoned with salt and pepper)
2 lb finely chopped yellow onions
3 tbsp butter
4 cups good quality beef stock
4 cloves
cup all-purpose flour
3 large bay leaves
tsp salt
tsp freshly ground black pepper
2 tbsp red wine vinegar
10 black peppercorns
4 juniper berries
Procedure:
Using a Dutch oven, melt the butter on med-high heat.
Brown the beef by batches on all sides. Place them on a plate & let them sit. Leave the browned bits in the oven for flavor.
Put the onions and butter if needed and cook for around 25 minutes or until they caramelize.
Stir the flour until combined. Add the beef.
Pour in the stock. Add the vinegar and seasonings and stir until combined.
Increase the heat and wait for the stew to boil. Lower the heat, cover & simmer for 2 hours.
Remove the lid and let it simmer for 30 minutes more.
Throw the cloves, bay leaves and berries. You can leave or throw in some peppercorns for an added kick.
Poffertjes
These easy yeast-free mini Dutch pancakes are traditionally cooked in a poffertjes pan. Nevertheless, you can use a large frying pan and put a small scoop of the batter in the pan. You serve the pancakes warm with a lump of butter and powdered sugar.

Mix the salt & flour in a large bowl. Slowly mix the milk.
Add the maple syrup and eggs and mix until the mixture becomes smooth. Transfer it to a piping bag.
Heat a poffertjes pan on high and grease the indentations lightly.
Fill the holes full with the batter and cook on high heat until they become golden brown.
Flip them over using a fork and cook the opposite side until they become all golden brown.
Bitterballen
These Dutch meatballs have a crispy coating, so they will be a hit when you bring them to a party.
Prep Time: 30 minutes chilling and 5 minutes cooking per batch
Serving Size: 2 dozen

Melt the butter in a saucepan. Mix the flour until it becomes smooth.
Add the broth slowly and wait for it to boil. Cook and stir for a minute or until it becomes thick.
Add the steak and parsley carefully. Cook & stir for 2-5 minutes or until the steak is not pink.
Add the nutmeg, salt and pepper. Put the mixture in a bowl and place it in the refrigerator for 3 to 4 hours or until chilled.
Put the bread crumbs in a bowl.
Whisk the eggs, oil & milk in another bowl.
Drop tablespoonfuls of the steak mixture in the bread crumbs and shape them into balls.
Dip the meatballs in the egg mixture and coat again with the bread crumbs.
Heat oil in a deep fryer or electric skillet to 375 degrees F.
Fry the meatballs a few pieces at a time for 2 to 4 minutes or until they become golden brown on all sides.
Drain them on paper towels & serve with mustard if you want.
