Most people know that kebab originated in the Middle East.
But actually, it now has countless versions and varieties all over the world.
In the United States and North America, kebab is also popularly known as shish kebab.
In Asia, it is typically referred to as satay.
Kebab is an umbrella term for grilled skewers of sliced meat or seafood, often accompanied with vegetables, fruits, tofu, and other ingredients.
The traditional kebab is made with lamb or mutton.
But recipes all over the world now include beef, fish, chicken and goat.
There are even some kebab recipes that make use of pork, which is quite surprising since pork is prohibited in the Middle East due to religious constraints.

When cooking kebabs, consider soaking your wooden skewers in water and oiling the grill grate to avoid sticking.

Shrimp, Bell Pepper Plum Kebab
Adding plums to your shrimp kebab can definitely turn an ordinary dinner night into something fancy. If plums are not available, you can use nectarine or peaches instead.

Preparation Cooking Time: 35 minutes
Ingredients:
3 tablespoons freshly squeezed lime juice
3 tablespoons sesame oil, toasted
1 teaspoon lime zest
2 tablespoons fresh cilantro leaves, chopped
Salt to taste
12 shrimp, peeled and deveined
2 plums, pitted and sliced
3 green bell peppers, sliced
Instructions:
1. In a bowl, combine the lime juice, sesame oil, lime zest and cilantro leaves.
2. Reserve 3 tablespoons of this mixture.
3. Toss the shrimp, plums and bell pepper in the remaining mixture.
4. Coat evenly.
5. Marinate for 15 minutes.
6. Preheat your grill.
7. Thread the shrimp, plums and bell pepper into skewers.
8. Grill the shrimp kebabs for 4 minutes per side.
9. Drizzle or serve with the reserved sauce.

Shish Kebab
This is a popular delicacy in Middle Eastern cuisine. The marinade used for this recipea mixture of herbs and spices, mostly cinnamon and allspicecan also be used for chicken and lamb kebabs. This is best served with toasted pita breads and tahini sauce.

Preparation Cooking Time: 2 hours and 30 minutes
Ingredients:
cup freshly squeezed lemon juice
cup vegetable oil
6 cloves garlic, crushed
teaspoon ground cinnamon
teaspoon ground allspice
Salt and pepper to taste
1 tablespoon vegetable oil
2 lb. sirloin steak, fat trimmed and sliced
2 onions, sliced into wedges
Instructions:
1. In a bowl, mix the lemon juice, cup vegetable oil, garlic, ground cinnamon, ground allspice, salt and pepper.
2. Pour the marinade in a sealable plastic bag.
3. Add the beef and toss to combine.
4. Refrigerate for 2 hours.
5. Preheat your grill.
6. Take the beef out of the refrigerator and out of the bag.
7. Brush the onions with the remaining vegetable oil.
8. Thread the beef and onions into different skewers.
9. Grill the beef for 4 to 5 minutes per side.
10. Grill the onions for 10 to 12 minutes per side.
