Some of our customers structure their entire meal around dessert. Some even ask us to put aside a specific treat before theyve ordered their main meal. A few seem to think of dessert as something a bit sinful. And how many of us consider dessert a reward for finishing the more essential part of a meal?

Perhaps we hear familiar echoes from the past: Finish your broccoli, if you want some ice cream. Well leave a full discussion of the psychological aspects of the interrelationships between love, security, hunger, and dessert to the experts. But what we all know is that for whatever reasons, people love desserts.

We celebrate this impulse to make a meal, a daily ritual, finer by topping it with something sweet. We dont advocate eating sugary desserts at every meal, nor do we think its a good idea to overdo a good thingit is by eating sour, salty, and bitter foods that we most appreciate the sweet. Its hard to imagine a life lived without ever indulging in sweets. Sweet isnt just a sugary taste; its anything agreeable, pleasurable, or gratifying, and we hope this book will add to your sweet moments.

Desserts are very popular at Moosewood Restaurant, and weve been serving a new menu of homemade desserts every day for a quarter of a century. This cookbook includes some desserts that have remained constants at the restaurant for years as well as new ones that have made a big splash with our customers. Many are low in fat or concocted from nutritious fruits and quite naturally take a place in a healthful diet.

In our usual Moosewood fashion, we have assembled a wide range of offerings in this cookbook. There are plenty of useful, everyday desserts, chosen because they are tasty, wholesome, and light, and especially appreciated when they are simple and quick to make. Other desserts are spectacular enough to mark special occasions. Some are seasonal desserts that we might make only once or twice a year, yet we wouldnt want a year to go by without them. Summer Berry Pudding, bursting with luscious, colorful fruit, is emblematic of midsummer bounty. Pecan Pumpkin Pie, served in the autumn, reminds us of our connection to this wheeling planet as it tilts away from the sun.
