2 medium mangoes, peeled, pitted, and cubed

1/3 cup sugar

1/4 tsp ground cinnamon

1 1/4 tsp curry powder

1/4 cup white vinegar

Juice of 1/2 lime

2 Tbsp minced peeled fresh ginger

1/4 tsp sea salt

1/2 tsp garlic powder

4 oz feta cheese

How to Prepare:

  1. Set the oven to 375 degrees F to preheat. Place the rack in the center section.
  2. On a sheet pan, combine the jalapeno, shallots, bell pepper, ginger, raisins, and cubed mangoes. Sprinkle the lime juice and white vinegar all over, followed by the salt, sugar, cinnamon, garlic powder, and curry powder.
  3. Toss everything to combine, then spread the ingredients across the pan evenly.
  4. Cover the pan with aluminum foil, then bake for 20 minutes, or until the mangoes are fork tender.
  5. Carefully take the pan out of the oven and remove the foil. Place the feta cheese over the mixture in the center and spoon some of the mixture on top of the cheese.

Makes: 3 servings

Ingredients:

1 1/4 lb chicken wings

1/2 cup peanut butter

2 Tbsp chicken stock

1/2 red bell pepper, seeded and chopped

Crushed red pepper flakes

Sea salt

Freshly ground black pepper

How to Prepare:

  1. Combine the peanut butter with the stock, and bell pepper in a food processor. Season with a dash each of red pepper flakes, salt, and black pepper. Process until smooth.
  2. Transfer to a bowl and add the chicken wings. Mix well to coat, then cover and refrigerate for 1 hour or more to marinate.
  3. Preheat the oven to 425 degrees F. Line a sheet pan with aluminum foil.
  4. Arrange the chicken pieces on the pan and bake for 1 hour. Serve warm.

Honey Gorgonzola Figs

Makes: 3 servings

Ingredients:

6 fresh figs, halved length-ways

1/2 tsp chopped fresh thyme leaves

2 Tbsp crumbled Gorgonzola cheese

2 Tbsp extra virgin olive oil

2 Tbsp honey

Sea salt

Freshly ground black pepper

How to Prepare:

  1. Set the oven to 375 degrees F to preheat. Place the rack in the center section.
  2. Cover a sheet pan with aluminum foil or parchment paper. Arrange the figs on the prepared pan in a single layer, exposed side facing upward.
  3. Drizzle the olive oil on top of the figs, then season lightly with salt, pepper, and thyme.
  4. Bake for 15 minutes, or until juicy and tender.
  5. Take the baked figs out of the oven and sprinkle the crumbled Gorgonzola on top of each. Drizzle the honey on top, then serve.
