Provencal Chicken & Vegetables
Ingredients:
- 1 Zucchini, sliced
- 2 tomatoes, diced
- 1 onion, chopped
- C olive oil
- Salt
- 1 lbs. potatoes, sliced
- Chicken breast halves
Directions:
- Set your oven to 450 degrees and prepare your baking sheet
- Add your vegetables to the baking sheet and drizzle with the oil and seasoning
- Roast for about 25-30 minutes, want potatoes to be brown
- Flip vegetables and add chicken, drizzle pan juices over chicken to keep moist and season
- Roast for another 25-30 minutes or until chicken is cooked thoroughly
- Serve
Stuffed Pork with Potatoes
Ingredients:
- 1 lbs. red potatoes, sliced
- 2 pints Brussel sprouts, trimmed
- 2 T olive oil
- Salt and pepper to taste
- C chopped, dried apricots
- 1 shallot, diced
- 2 T apricot jam
- 1 pork tenderloin
Directions:
I. Preheat your oven to 450 degrees, and prepare baking sheet
II. Toss your potatoes and sprouts, drizzle with oil
III. Roast for about 15- 20 minutes
IV. Ina bowl add your apricots, shallots and the jam and season to taste
V. Create small pockets in the pork tenderloin and stuff with apricot blend
VI. Tie blend around pockets. Season to taste
VII. Move veggies on baking sheet over to make room for Pork tenderloin and roast for another 30 minutes or so until pork is cooked
Salmon with Cabbage and Kale
Ingredients:
- 5-6 C Kale
- 4 C cabbage
- 6 T oil
- Salt and pepper to taste
- Salmon fillets
- 1 t lemon juice
- C fresh dill
- 1 tsp Dijon mustard
Directions:
I. Set your oven to 450 degrees and add your vegetables to baking sheet
II. Drizzle oil over veggies and season to taste
III. Bake for 5-6 minutes
VI. Season to taste, your salmon and drizzle oil over salmon as well and add to baking sheet baking for 10 minutes
V. Whisk your lemon, dill and mustard with C oil
VI. Pour sauce over salmon before serving
Sausage with Squash and Onions
Ingredients:
- 1 large Squash, sliced
- 1 onion, sliced
- 3 T olive oil
- Salt and pepper to taste
- 1 lbs. Italian sausage
- C asiago cheese, grated
- 1 T sage
- C dried cherries, chopped
Directions:
- Set your oven to 475 degrees and prepare your baking sheet
- Add veggies to baking sheet and drizzle with oil and season to taste,
- Add sausage links, and roast for about 15-20 minutes
- Heat broiler and sprinkle cheese and sage over veggies.
- Broil until cheese is brown and bubbly and sausage is cooked
- Sprinkle with cherries and serve
Spicy Potatoes and Pork
Ingredients:
- 1 Peeled, sliced sweet potato
- 2 parsnips, cut up
- 1 T fresh ginger
- 3 T olive oil
- 2 T brown sugar
- tsp cayenne pepper
- 1 tenderloin
- Salt to taste
- Lime wedges
Directions:
- Set your oven to 475 degrees and set up your baking sheet, adding first three ingredients
- Mix the brown sugar and spices in a small bowl, whisking together. Use to rub pork
- Season veggies with leftover seasoning mixture
- Bake for 20-25 minutes
- Internal temp must read minimum of 145 degrees in the pork tenderloin
- Toss veggies with the oil and seasonings and serve
Salmon With peppers
Ingredients:
- 1 Orange
- 1 Fennel Bulb, sliced
- 1 yellow bell pepper, sliced
- 2 T olive oil
- Salmon fillets
- Salt and pepper to taste
- 1/3 C black olives, diced
Directions:
I. Start with heating with your broiler, and grate your orange into slices
II. on baking sheet at your orange zest and slices, peppers, and oil
III. Add salmon and seasoned veggies, seasoned salmon, salt and pepper to taste
IV. Broil until salmon is no longer pink, around 8-10 minutes
V. Sprinkle with olives and bulb
Vi. Serve
Roasted Chicken and Potatoes
Ingredients:
- Chicken breasts
- Salt and pepper to taste
- C grated parmesan
- C Panko
- 3 T EVOO
- 2 T parsley
- 2 T minced garlic
- 2 Large leaflets romaine
- 4 anchovy packets in oil, Drained and chopped
- 1 lemon, wedged
- lbs. baby potatoes, sliced
Directions:
- Set your oven to 450 degrees and prepare your baking sheet, lining with foil or parchment paper
- Season your chicken with seasonings and add to baking sheet
- Mix your cheese, panko and 2 T oil and minced garlic in bowl and create a bread crust and lay over your chicken
- Roast for about 10-5 minutes
- Drizzle your greens (lettuce) with oil and minced garlic
- Lay the chicken over the romaine and roast for about 5 minutes, until lettuce is browned around edges, and chicken is cooked
- Top with anchovies and lemon wedges
Drumsticks and Potatoes
Ingredients:
- Ciabatta load
- 8-10 chicken thighs
- Cherry tomatoes
- Basil leaves
- 2 T minced garlic
- C black olives, chopped
- I red pepper, chopped
- 8 slices of pancetta,
Directions:
- Het your oven to 180 degrees and prepare your roasting pan
- Chop your ciabatta up into crumbs and add to roasting pan with the chicken
- Add remaining ingredients
- Drizzle oil over ingredients
- Toss and bake for 30 minutes
- Now you will add the pancetta on top of chicken for 15 minutes you want the chicken falling off the bone
- Serve with side salad
Peanut Chicken
Ingredients:
- C peanut butter
- C water
- tsp sesame oil
- 2 T soy sauce
- 2 tsp sambal oiled
- 2 tsp rice vinegar
- Chicken thighs
- 1 bunch broccoli
Directions:
- Preheat your broiler and add everything together in baking sheet
- Toss the chicken and broccoli in the peanut spicy sauce and add back to baking dish
- Broil for 10 minutes or so
Chicken and Butternut Squash Roast
Ingredients:
- 1 lbs. butternut squash, cut up
- 3 Fuji apples, cored and diced
- 1 T chopped sage
- Salt
- Chicken legs
- 2 T butter
Directions:
- Set your oven to 400 degrees in a roasting pan toss your apples, and squash
