The fresh foods of the Pacific Northwest, a farm-to-table mentality, and a love for homemade meals were a way of life. Carrian often says that she had no idea just how good she had it. She fell in love with the sweet marionberries from the farm down the road, and she often dipped big, juicy strawberries in the sugar bowl. Her philosophy is Theres nothing like fresh ingredients.Meanwhile, Cade was busy growing up on the other side of the country. Throw in a little football, and youve got yourself a very happy Cade. Cade was quick to learn that every recipe has a story behind it and that the best recipes include a little bit of the cooks soul with the meal.Fast forward a few years, and somehow we found each other and fell in love with each other and with the flavors of each others childhoods. We started a life blending not only our traditions and families but also our Pacific Northwest and Southern ways of life.On our third anniversary, we took a trip to San Francisco, where we tasted the most delicious Margherita pizza ever. Perfect WafflesThis is everything we love in a waffle light, buttery, crisp on the outside, and fluffy on the inside. The secret is to mix the sweet, fresh cream with the Southern-kissed buttermilk. Its like us: a little sweet and a little Southern.1 cups all-purpose flour2 teaspoons baking powder1/4 teaspoon baking soda2 tablespoons cornstarch3 tablespoons plus 1 teaspoon granulated sugar1/2 teaspoon fine sea salt3 large eggs3/4 cup buttermilk3/4 cup heavy cream1/2 cup (1 stick) unsalted butter, melted and cooled slightlyHeat a waffle iron according to manufacturers directions.In a large bowl, whisk together the flour, baking powder, baking soda, cornstarch, sugar, and salt.In another bowl, whisk together the eggs, buttermilk, and heavy cream.Using a wooden spoon, stir the wet ingredients into the dry ingredients until just a few streaks of flour remain and the batter is almost mixed together. Add the melted butter and stir until just combined.Let batter rest 15 to 30 minutes.Brush butter on both sides of the hot waffle iron. Pour 1 cup batter into the iron and allow to cook per manufacturers instructions.Makes 4 waffles.TIP: Omitting the cornstarch creates a waffle that is crisp on the outside but soft in the middle. Our kids like it with the cornstarch so the waffles are soft and fluffy throughout.
