Introduction
I have loved cooking for as long as I can remember. Spending hours in the kitchen preparing a gourmet meal was and still is my idea of a good time. When I met my husband, Rich, in college, I put my culinary skills to work and whipped up a batch of chocolate chunk and walnut cookies. That was all it tookhe was hooked! Now, more than a decade later, were married with two children, and I still enjoy preparing foods infused with love and flavor.
Although I rarely have hours to devote to cooking, what I have learned in my years in the kitchen is that long cooking times transform ordinary ingredients into something extraordinary, and the slow cooker is the perfect tool for the job. With a slow cooker, I can prepare succulent meats with fall-off-the-bone consistency and coax amazing flavors from everyday vegetables without ever touching a frying pan. And, I can do it without a second thoughtjust toss the ingredients into the slow cooker, set the timer, and look forward to a healthy and delicious meal. Early in our relationship, Rich and I watched the documentary Step into Liquid and decided that someday we would learn to surf. When we moved to Southern California, that dream became a realitya passion we share and our standing date whenever we can get a babysitter. After a long day at the beach, I love having a healthy meal for two waiting in my slow cooker.
Surfing consumes so much energy, we usually return home absolutely ravenous. I could easily consume all the calories I burned and then some! I love that my slow cooker allows me to simply brush the sand off my feet and sit down to a complete, healthy meal. More importantly, the food is nourishing and satisfyinga winning combination for a healthy body and a healthy relationship.
