WHEN MY EDITOR first suggested the title of this book, I thought it was a bit obviousof course Indian food is for everyone! But if youve never had much exposure to spice, or if youre worried it will be complex and time-consuming to cook Indian food, Im here to set the record straight. Indian food is actually not that complicated, and the flavors and techniques can add new dimensions to standard British or American fare, at any meal (even breakfast). So maybe youre a mom or dad looking for a quick, healthy weeknight dinner or planning an elaborate family feast. Maybe you like the idea of using spices, but youre a little unsure about where to start. Or maybe you are looking for fun ideas for a glam dinner party with your friends, a fresh and fiery barbecue, or a tasty vegetarian (or vegan) spread. It could even be that you are feeling a little under the weather and need a warming, spicy pick-me-up to give you a hug from the inside out.

Whatever the case, these are some of my favorite recipes, which illustrate how you can make Indian flavors part of your everyday life (and special occasions, of course!). The recipes in this book are unique in that they blend the influence of my family and ancestors with the tricks I have picked up. I hope your confidence increases and youll feel inspired to make these dishes on your own.

IT ALL STARTS WITH A LITTLE SPICE

If youve never cooked with spices, I hope this book gives you the confidence to start. Understanding what they do and how to use them will forever change the way you view food.

Spices are not just about flavor and aromatics; in Indian cooking their contributions are much more holistic: They can be used to delicately soothe and aid digestion, induce an internal cooling or warming sensation, stimulate the immune system, and so much morethe delicious taste they infuse doesnt hurt either. Once you pluck up the courage to get started, Ive even given you some red-hot tips on how to crank up the punchiness for those who love a kick, and how to mellow things down for those with a more delicate palate. I have also tried to show you how you can adjust the dishes for people with differing dietary requirements.

If you are a novice when cooking Indian food or an old hand, there is always something new to try. Indian food continues to evolve as new influences, new ideas, and new cooking techniques come to the scene.

As a British-born Indian, I have seen how Indian food has been adopted into everyday life in the U.K. As a nation we love Indian cuisine; the United Kingdom is probably the most advanced Western country in its journey and love affair with the cuisine. Being lucky enough to travel the world with my job, I have realized that the flavors I am used to at home are now impacting all parts of the world in so many different cuisines. They are now familiar to so many people, and having a curry or an Indian meal (as exciting as it is) is becoming part of their everyday repertoire.

THE INDIAN MEAL

Contrary to what you may occasionally experience at your local takeout joint, the Indian meal isnt about filling a hunger hole with a monotonous starter, a huge mountain of curry and rice, and then a sweet dessert. Rather, its about indulging the senses, experiencing a flow of energy to satisfy the mind, soul, and body by reinvigorating each and every cell with nutrients, exciting visual cues, and an elevated physical dining experience. The meal usually consists of a multitude of small dishes, each embellished differently with condiments and spicesa surfeit of vivid colors and indulgent flavors that wrap around your tongue and excite each and every one of your senses.

In Indian culture, your home is your personal temple, a sacred place where any guest is welcomed and always treated like a god. You are blessed to have them in your life, and you honor them by breaking bread together. Hospitality, kindness, and love are what mealtimes are all aboutchatting, laughing, exploring flavors, and, most of all, sharing all that you have with others. Indians love to savor food, so we eat slowly and we reflect, which is why variety is important at every mealtime.

THE INDIAN DINNER PARTY

The process of Indian dining at home is very different from the West, mostly in terms of timing.

A gathering always begins with a cup of sweet tea or a drink, and a few shared treats. Then its all about snacks, nibbles, chutneys, dips, and sharing platters for the next couple of hours. The main meal comes much later in the evening, and it is usually a selection of small tapas-style dishes served together, representing all the different food groups (proteins, carbohydrates, dairy, fats, vegetables). These might include a meat or fish curry, vegetable masalas, lentil dhals, rice and/or breads, a yogurt-based raita, and a fresh salad or kachumber. The meal may or may not end with something sweet, but if so, its usually something light like sliced and spiced fruit. And then, before bed, the aim is to end each and every day with something special to settle you into a great night of rest.

Happily (for me), we seem to be moving away from the stiff fine-dining approach across cultures. The new ideal is to gather your loved ones in a relaxed environment and focus on enjoying yourselves rather than worrying about using the correct spoon or fork. Indian dining has always been more about people and the food rather than the formalities.

FIVE FINGERS, FIVE ELEMENTS

The art of eating with your hands is a precise and delicate practice inspired by Ayurvedic teachings. Each finger is said to be an extension of one of the five elements of nature. The thumb is an extension of space, the forefinger air, the middle finger fire, the ring finger water, and the little finger earth. When eating, your fingers bring together all of natures elements and heighten your awareness of the texture, taste, aromas, and temperature of the food, making the whole experience not just about fuel for the body but also fuel for the senses. When you touch your food with your hands, you are creating a physical and spiritual connection with it becoming more present in the moment.
