So, you have decided to go to Vegan? Well, congratulations! You have made a wise decision for you and your family. Welcome to the world of healthy food. I had a vested interested in compiling this unique assortment of Vegan recipes, as both of my sisters are completely Vegan. I have to admit; at first, I was worried that I would not be able to create the type of dishes that the whole family would enjoy. I was COMPLETELY wrong. Through all my research and experimentation, I have found Vegan dishes to be creative and absolutely delicious. I have personally cooked and served all 50 recipes in this book. I am excited to share all of the wonderful dishes with you and your loved ones. I know you will find these to be not only simple to create, but mouthwatering as well. Here is a little background on the Vegan diet:

A Vegan diet means abstaining from all dairy and animal products. This means you cannot consume meat, poultry, fish, milk, cheese, yogurt, and other dairy products. The diet is completely free of animal products. But no worries, that does NOT mean lack of good taste.

The benefit of going Vegan is ominous. Vegan diets tend to be higher in dietary fiber, folic acid, vitamin C, vitamin E, iron, and magnesium. And lower in calories, saturated fat, cholesterol, omega-3 fatty acids, vitamin D, calcium, zinc, and vitamin B12. Studies by the American Dietetic Association show that a thoroughly planned Vegan diet can reduce the risk of some chronic diseases and are regarded as appropriate for all stages of the human lifecycle.

Electric slow cookers were introduced in the 1970s; forever simplifying the weekday meal, and enabling people to create delicious meals with little to no effort. It has been evident over the years that there are multiple advantages of cooking in a slow cooker. The great combination of economic value, convenience, and good taste is too good to resist. Most of the time, the preparation only involves cutting vegetables and opening some cans! Then put all the ingredients in the pot, go to work or continue whatever you were doing, and come back after a few hours to find your food ready.

We all already love our slow cookers, so why not use it to prepare our delicious Vegan recipes as well? Preparation takes only minutes, and your slow cooker does all the hard work; simmering your food for hours and bringing out the best flavors.
