This is one of my favorite easy main dishes. Its scrumptious and very inexpensive to make. Sweet onions are delicious, but you can use any kind. Ive heard that in France street vendors sell these tarts by the slice at room temperature...its true that leftover slices are amazingly good served cold!
4 to 5 onions, thinly sliced and separated into rings
1-1/2 T. oil, divided
salt and pepper to taste
6-1/2 oz. pkg. pizza crust mix
1 c. shredded Swiss cheese
In a skillet over medium-high heat, saut onions in one tablespoon oil for about 20 minutes, until light golden and caramelized. Add salt and pepper to taste. Meanwhile, prepare pizza crust mix and let stand several minutes, according to package instructions. Spread out dough in a lightly greased 12" round pizza pan; lightly coat with remaining oil. Spread onions evenly over dough. Sprinkle cheese evenly over onions. Bake on the bottom rack of oven at 425 degrees for 12 to 15 minutes, until edges of crust are golden and cheese is melted and bubbly. Cool slightly; cut into wedges. Serves 3 to 4.
A flexible plastic cutting mat makes speedy work of slicing & dicing...after chopping, just fold it in half and pour ingredients into the mixing bowl.

Ive been making this satisfying soup for years. We love butter beans and its nice to have a different way to enjoy them! This recipe is also a great way to use up any leftover veggies that are tucked in the fridge.
3 T. oil
1-1/2 c. celery, chopped
1 c. carrot, peeled and chopped
1/4 c. onion, chopped
1 zucchini, chopped
salt and pepper to taste
3 T. all-purpose flour
32-oz. container vegetable or chicken broth
1-1/2 c. water
2 16-oz. cans baby butter beans, drained
1 t. dried basil
In a large soup pot, heat oil over medium heat. Add celery, carrot, onion and zucchini; season with salt and pepper. Cook, stirring often, until vegetables are soft, about 5 to 7 minutes. Sprinkle flour over vegetables; cook and stir for one minute. Gradually add broth and water; stir until smooth. Add beans, basil and additional salt and pepper, if desired. Bring to a boil. Reduce heat to low; simmer for 20 to 25 minutes, until slightly thickened. Makes 6 servings.
