As a home baker, I have written this book as a source of inspiration and joy for other home bakers who love to try fun and creative cookie recipes. Like all things in life, I find that baking is part following the process and part trusting yourself and your senses. Make sure you carefully read through theentirerecipe before beginning. Go through the ingredient list and make a grocery list to buy any of the ingredients you dont have on hand. Next, read through the instructions to get a sense of which tools you need. Also keep in mind that some cookies will require a longer chilling time, so its good to note this before starting a recipe.
Bring ingredients to room temperature, unless written otherwise. Room temperature ingredients mix together better than cold ingredients, resulting in a better-tasting cookie. In a pinch, eggs and butter can quickly be brought to room temperature. Place the whole egg(s) into a bowl or large cup filled with very warm water for 1 minute. For butter, slice it into tablespoon-sized (14-g) pieces, and lay each piece flat at room temperature for 20 to 30 minutes.
Measure out ingredients at the start for a seamless baking experience. Each recipe lists the ingredients by volume and weight. A digital food scale is an easy-to-use tool that comes in handy when baking. After an initial read through the recipe, my mise en place routine begins by preheating the oven and pulling out all my cold ingredients. During this time, I slice my butter to bring it to room temperature quickly. If I need to divide an egg to use just the yolk, I do this while its still cold and easier to divide. I then measure out all my dry ingredients into a bowl using a food scale and do a thorough whisk to combine. Once thats finished, I will measure or pull out any sugars, extracts and mix-ins needed for the recipe. Usually, by the time all this is done, the butter and eggs have reached room temperature, and I can begin to make the cookies.
Preheat the oven early. Many ovens need at least 25 to 30 minutes to fully preheat before the internal temperature truly matches the temperature on the digital panel.

Either way, the recipe will note when it is important to chill the dough to get the best results in that particular cookie. Make sure to always wrap or cover the dough completely with plastic wrap. Unless stated otherwise in the recipe, I recommend allowing the dough to sit out at room temperature for 20 to 30 minutes prior to baking if the dough has been chilling for 2 or more hours.
Reserve some chocolate chips or chunks for topping cookies right before baking. As the cookies bake, these extra chocolate pieces melt beautifully on top, creating photo-worthy cookies.
For perfectly round cookies, take a round cookie cutter, pastry ring or other round object that is slightly wider than the cookie. Place the cookie cutter over the cookie, with the edges of the cookie on the inside of the cookie cutter. Gently nudge the edges of the cookie in a circular motion back into a round shape. This is best done the first few minutes the cookies come out of the oven, while they are still on the baking sheets.
