Foreword
Originally founded as the Buffalo Bill Museum in 1927, this institution has served two generations of American and international guests in celebrating the history and art of the West. From its inception, the museum, known since 1958 as the Buffalo Bill Historical Center, has enjoyed vast popular appeal. A large and diversified audience has journeyed to Cody over the years to enjoy its collections. Those who took the time to step through the Historical Center's doors came away both better informed and pleasantly entertained.
In the same fashion that Buffalo Bill was much more than a great entertainerhe was a son of the West, an adventurer, an American hero in his own right, a visionary conservationist as well as a showmanthe Historical Center was mandated to do more than simply entertain its vast public. Our role as an educational institution has expanded each year. Our responsibility in preserving and caring for the objects entrusted to us has long been a primary goal for the trustees and staff alike. And yet, without the spirit of entertainmentwithout imbuing our audience with a bit of dramaour task as educators and as preservers would be relatively mundane and uninviting.
The Buffalo Bill Historical Center, utilizing the rich resources of its collections and the diversity of the human element within the western experience, offers this testament to the culinary arts. It has provided an opportunity to expand our role as entertainersand yours.

This cookbook is the culmination of a two-year project undertaken by the Historical Center's volunteers with love and dedication. My thanks to all who shared their ideas and recipes and gave unselfishly of their time, and my thanks also to those who gave continued encouragement and supportthe Historical Center's staff, downtown businesses, and, of course, our families.
More than 1,200 recipes were submitted from throughout the country and abroad. Al1 the recipes were tested at least twice and chosen for your pleasure. We hope that you will enjoy the wide range of selections from campfire simplicity to party elegance.

Buffalo Bill Historical Center
The Historical Center comprises four museums:
The Buffalo Bill Museum contains a vast collection of Cody memorabilia. William F. Cody, the best known American of his day, is depicted in his many rolesscout, hunter, soldier, entertainer, statesman, businessman, and, most important, portrayer of our Western heritage.
The Whitney Gallery of Western Art displays paintings and sculptures spanning the years 1830 to the present and depicting the reality, myth, and beauty of the West. Included are major artists of the Westward movement, many of whose works are represented in this cookbook.
The Plains Indian Museum preserves the Native American culture with extensive displays of Indian materials that reflect the artistic expression of the first Americans. The tribes represented include the Sioux, Cheyenne, Shoshone, Crow, Arapaho, and Blackfeet.
The Cody Firearms Museum houses the unique collection of Oliver F. Winchester, begun in 1860. The collection of more than five thousand projectile arms includes arms made by Winchester Repeating Arms Company and other major American and international manufacturers.
Hors d'Oeuvre
Avocado Crab Dip
Blend together avocado, juice, onion and Worcestershire until smooth. Add cheese, sour cream and salt. Blend until smooth. Fold in crab and serve with taco chips.
