Fiery Fruit Salad
This Fiery Fruit Salad may be a nontraditional way of eating fruit, but its sure to tantalize your senses with the cool sweetness of fruit combined with heat from the Sriracha. If that combination isnt enough for your taste buds, the cilantro and mint reinforce this sweet and spicy tandem perfectly! Try this recipe with other fruits, like mango slices, strawberries, cantaloupe, or whatever pleasures your palate.
Serves 810
2 apples, halved and thinly sliced
2 pears, halved and thinly sliced
12 pineapple, peeled, cored, and thinly sliced
3 kiwis, peeled and thinly sliced
14 cup fresh lime juice
14 cup fresh orange juice
12 teaspoon Sriracha sauce
2 tablespoons freshly chopped cilantro
2 tablespoons freshly chopped mint
1 teaspoon orange zest
12 teaspoon raw organic honey
1 tablespoon white wine vinegar
1. Place sliced fruit on serving platter, slightly stacking and alternating with each fruit.
2. In a mixing bowl, combine lime juice, orange juice, Sriracha sauce, cilantro, mint, orange zest, honey, and white wine vinegar. Whisk together until well blended and frothy, and set the vinaigrette aside.
3. Pour spicy vinaigrette over fruit and serve immediately.
Cinnamon Spice Paleo Muffins
These super-tasty Cinnamon Spice Paleo Muffins are so simple; theyre great for breakfast on the go and are equally as satisfying any time of day. The spice from the cinnamon and nutmeg is just right, and it really brings out the sweetness of the more traditional ingredients like honey and applesauce. Store these muffins in an airtight container for up to a week.
Yields 6 muffins
Coconut oil (for greasing the pan)
5 large eggs
1 cup homemade applesauce
12 cup coconut flour
2 tablespoons cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon vanilla extract
Raw organic honey, for garnish (optional)
1. Preheat the oven to 400F and grease a standard, 12-cup muffin pan with coconut oil.
2. Add eggs, applesauce, coconut flour, cinnamon, nutmeg, baking soda, and vanilla extract into a medium mixing bowl. Mix with an immersion blender or whisk until well mixed. Let the batter sit to thicken about 3 minutes. Once thick, use 13 cup measuring scoop to spoon batter into the muffin pan.
3. Bake 1215 minutes until muffins start to brown and are not soft when lightly touched on top. Remove from oven and let cool for 2 minutes, then drizzle with honey, if desired.
SWEETER BY THE DOZEN!
Do you prefer your muffins a bit sweeter, to help balance out the spice? Go ahead and reduce the applesauce by 14 cup and add an overripe banana before blending. You can also try adding 12 cup blueberries or strawberries, or even a finely chopped apple to add a little crunch for additional texture.
Zesty Breakfast Sausages
These Paleo sausage patties are so easy to make at home that youll never buy them at the grocery store again! They pack a huge amount of flavor in just one bite without leaving you feeling guilty from any unwanted additives. The key ingredient in this recipe is the ground fennel. Its licorice-like taste is fresh and bright and beautifully accents the pork. The combination of hot and spicy peppers really completes the zing!
Serves 4
1 pound ground pork
1 teaspoon minced garlic
1 teaspoon ground fennel
1 teaspoon paprika
12 teaspoon black pepper
12 teaspoon sea salt
14 teaspoon cayenne pepper
2 tablespoons olive oil
1. Combine pork, garlic, and all dry ingredients in a mixing bowl. Make sure all spices are incorporated throughout the pork.
2. Shape pork mixture into small, circular patties (approximately 8 patties).
3. Heat a large skillet to medium heat and add olive oil. Once heated, add the patties to the skillet and cook for approximately 34 minutes per side until golden brown. (The middle of the patties should no longer be pink.) Remove from heat and enjoy!
