Ingredients
O rganic
We believe that your ice cream is only as good as the ingredients youre using. Since youve adopted a vegan diet, you are obviously a health conscious person. Organic ingredients are not only tastier; they are often better for you as well. If you choose your vegan diet because of beliefs and values, then you will enjoy knowing that the purchasing of your organic ingredients is helping local farmers. Sugar
Whenever a recipe calls for sugar it is referring to organic granulated sugar, unless otherwise noted.
Salt
If a recipe mentions salt, it is speaking of ordinary kosher salt.
Chocolate
Chocolate is a very popular ingredient and favorite flavor. This book dedicates an entire chapter to recipes for our chocolate loving readers. The good news here- you can use whatever brand and kind of chocolate you typically buy and love to indulge in for your ice cream. Whatever brand you decide on, seek a minimum of 60% cacao for a true chocolate flavor. Higher cacao percentages will result in a stronger flavor.
Nuts
We know nuts can be an expensive ingredient, but a little will go a long way when it comes to your frozen treats. When toasting your nuts, use an oven temperature of 350 F and toss them repeatedly for even color. Nuts should be ground with a small amount of sugar for the best flavor. To ensure that your nuts are fresh, only buy what you need, or freeze the unused raw ones to extend shelf life.
Fruit
Choose organic and in season fruits when making your treats. We promise our recipes are all deliciousbut only if you use the best ingredients! Strawberry ice cream is not meant to be enjoyed in the winter. Buying in season fruits will be cheaper, and much easier. Dont be tempted to buy fruit from around the globe, as it will lose flavor and freshness on its journey.
Alcohol
If youre anything like us, you already possess an impressive liquor cabinet. Dont throw your next party without a little treat tapped into your desserts. One important thing to keep in mind is that this book is about frozen desserts, and alcohol does not freeze. Also, avoid going overboard. Too much alcohol will prevent the dessert from setting, and it will end up slushy.
