Here are some of our favorite ice cream recipes, and we know you will love them too. If you can think it, ice creams it, which is all it takes. A little ice cream base and additional goodies, you dont need a churner; it just works. Whether it is for summer or sitting before the TV, ice cream is the perfect companion. Yes, store-bought ice cream is fine, but there is nothing absolutely more delicious than creating sweetness from everyday pantry ingredients.
1. Roasted Plantain Ice Cream
What! Yes, if you have overripe plantains at home rather than have they wasted, make ice cream. The caramelization of the roasted plantain adds a depth of flavor and richness, and it is yummy.
Makes 1 quart
Cook time 50 minutes
Ingredients
Method
Mash the roasted plantain in a bowl and remove the stringy center
In a saucepan, bring to a simmer, the milk, honey, cream, and cinnamon. Do not boil
Take it off the heat; whisk the egg yolks with sugar until thick and yellow
Add a portion of the cream mix into the egg mix whipping constantly
When half the portion is added, add the mashed plantain and whisk through
Pour the remaining cream and mix well
Pour in a churner or set in the freezer covering the top with a film to prevent any skin from forming
Serve when it is done
2. Hot Peppers Ice Cream
If you have ever wondered how cool heat is, you should try this ice cream. We added a little something extra to take your mind off the heat.
Makes 1 quart
Cook time 20 minutes
Ingredients
200 ml heavy cream
200 ml whole milk
300 ml pineapple puree
cup sugar
6 egg yolks
1 ghost pepper
1 scotch bonnet
1 red chili
1 jalapeno
1 tbsp chili flakes
Method
Chop the peppers into tiny bits, seeds, and skin
Add the peppers a saucepan of cream, milk, and chili
Simmer gently; meanwhile, beat the sugar and egg yolks together
Add the pineapple puree into the milk-pepper milk
Pour this mixture into the egg mixture and whisk
Churn and freeze
3. Squid Ink Ice Cream
Hmmm, if you love calamari, you can use other parts of the squid too. This unique color is not the most appealing, but it tastes marvelous.
Makes 1 liter
Cook time 40 minutes
Ingredients
400 ml whole milk
300 ml heavy cream
200 ml condense milk
cup sugar
1 tiny pinch Xanthan
cup tapioca flour
2 tbsp squid ink
Method
Bring the milk, cream, condensed milk, sugar, and flour to a simmer
Stir well until sugar is dissolved
Add the ink and Xanthan gum to the mix
Now place in a churner or add liquid nitrogen to firm up the paste
Serve as desired
4. Marshmallow Coconut Ice Cream
There are always marshmallows in the cupboard, and they make the fluffiest ice cream too.
Makes 1 pint
Cook time 20 minutes
Ingredients
500 ml heavy cream
400 ml coconut milk
70 g sugar
250 g marshmallows
vanilla seed flavor
Method
Bring the vanilla, coconut milk, cream and sugar to a boil
Bring the heat down and add the marshmallow and whisk vigorously
Put the saucepan over a cold bath and whisk well
Pour in a bowl and freeze
5. Miso Ice Cream
If you love Japanese flavors, you will love this ice cream. Add a little caramel, and you will never try another ice cream again.
Makes 1 quart
Cook time 3 4 hours
Ingredients
