Recipe 1: Almond Banana Bread
This banana bread has nice crunchy almonds added to it, but it also has flavorful almond flour. Using almond flour makes the bread dense and moist, exactly what you want in banana bread!
Serving Size: 4
Cooking Time: 10 minutes
Ingredients:
- cup butter softened
- 1 cup dark brown sugar
- 2 eggs, whisked
- 1 tsp almond extract
- 1/8 tsp kosher salt
- 1 cup flour
- 1 cup almond flour
- 1 tsp baking soda
- 3 large ripe bananas
- cup chopped almond
Directions:
Blend the butter and dark brown sugar in a stand mixer equipped with the paddle attachment until frothy and light. Scrape down the basin a few times to incorporate all the sugar and butter.
Add the ripe bananas to the bowl and mix as well. The mixer will mash the bananas nicely with the sugar, so there is no need to mash them beforehand! If you are making the banana bread by hand and do not have a stand mixer, then be sure to mash the bananas well and incorporate them fully into the sugar mix- there should be no lumps!
Add the eggs and almond extract to the bowl and blend well. The batter may look a little separated, but that is okay; it will come together soon!
