I am lucky enough to live near a grocery store that sells overripe bananas for banana bread, so I never have to wait to make a loaf. If you arent so lucky, then buy bananas that areas ripe as possible and leave them until they start to turn brown and speckled. You dont want rotten, mushy bananas, but you dont want a firm fruit either.

3/4 teaspoon salt

4 ounces softened margarine
8 ounces softened cream cheese
10 ounces granulated sugar
2 large eggs
8 ounces over-ripe bananas, mashed
1 teaspoon vanilla extract
18 ounces all-purpose flour
ounce baking powder
1/2 teaspoon baking soda
6 ounces pecans, chopped
1 ounce brown sugar
1/3 ounce ground cinnamon

Directions1. Preheat oven to 350 degrees Fahrenheit. Coat 2 8x4 loaf pans with a cooking spray.2. Place cream cheese and margarine in a bowl and creamwith an electric mixer until smooth.3. Gradually beat in granulated sugar until fluffy. Beat eggsin one at a time, combining well before adding the next.4. Add bananas and vanilla and stir well.
