Introduction
There is nothing like the smell of a fresh banana bread baking in the oven. The aroma reminds me of snack timeafter school when my mother would give us a slice of fresh banana bread with a glass of milk. Authors Note:I am lucky enough to live near a grocery store that sells overripe bananas for banana bread, so I never have to wait to make a loaf. If you arent so lucky, then buy bananas that areas ripe as possible and leave them until they start to turn brown and speckled. You dont want rotten, mushy bananas, but you dont want a firm fruit either.

Ingredients24 ounces all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
16 ounces white sugar
1 teaspoon ground cinnamon

This creamy and delicious banana bread wont last long when you serve it. I have used Stevia in place of brown sugar in some cases to great results.

Ingredients4 ounces softened margarine
8 ounces softened cream cheese
10 ounces granulated sugar
2 large eggs
8 ounces over-ripe bananas, mashed
1 teaspoon vanilla extract
18 ounces all-purpose flour
ounce baking powder
1/2 teaspoon baking soda
6 ounces pecans, chopped
1 ounce brown sugar
1/3 ounce ground cinnamon
Directions1. Preheat oven to 350 degrees Fahrenheit. Coat 2 8x4 loaf pans with a cooking spray.2. Place cream cheese and margarine in a bowl and creamwith an electric mixer until smooth.3. Gradually beat in granulated sugar until fluffy. Beat eggsin one at a time, combining well before adding the next.4. Add bananas and vanilla and stir well. Mix in flour, baking powder and baking soda until just moist.
5. In a separate bowl, combine pecans, brown sugar and ground cinnamon and mix well.

The maple flavor in this banana bread is amazing when eaten with a hot cup of flavoured coffee. I have used almonds and pecans in place of walnuts in this recipe for a differenttexture and flavor.

4 ounces maple syrup
1 large egg
2 over- ripe bananas, mashed
1 ounces milk
1/2 teaspoon maple extract
