    TOTAL TIME: 1hr 20mins PREP: 20 MINS COOK: 1 HR SERVINGS: 18 YIELD: 18 muffins Ingredients 12 cup butter or margarine 1 14 cups sugar 1 teaspoon vanilla 2 - photo 2 Ingredients 1/2 cup butter (or margarine) 1 1/4 cups sugar 1 teaspoon vanilla 2 eggs (beaten) 3 ripe bananas, smashed (about 1 cup) 1/4 cup milk 2 cups flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2-1 cup chopped pecans (optional) or 1/2-1 cup walnuts (optional) Directions
    1. Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired.
    2. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups.

      For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!

    3. *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer.
    4. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked.
    5. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
    A Winning Banana Nut Bread
    TOTAL TIME: 1hr 10mins PREP: 10 MINS COOK: 1 HR SERVINGS: 8 YIELD: 1 loaf Ingredients 6 ripe medium bananas 1 teaspoon lemon juice 275 g cake flour 15 ml - photo 3 Ingredients 6 ripe medium bananas 1 teaspoon lemon juice 275 g cake flour 15 ml baking powder 2 ml salt 200 g sugar 150 g peanuts, chopped 2 eggs, separated 50 g butter or 50 g margarine, melted 5 ml grated lemon rind Directions
    1. Preheat the oven to 180C/350F Grease a 23x13x7 cm loaf tin. Peel and mash the bananas and mix them with the lemon juice.
    2. Sift together the cake flour, baking powder and salt, in a fairly large mixing bowl.
    3. Add the sugar and nuts and mix. Beat the egg yolks and add them to the flour mixture with the butter or margarine. (I sprinkle some brown sugar on top).
    4. Bake on the middle shelf of the oven for 60 minutes. (I sprinkle some brown sugar on top).

      Test with a skewer to see if done: if the skewer comes out clean, the loaf is ready; if it does not, baking for a further 10 to 15 minutes.

    6. Allow the loaf to cool slightly in the tin. Turn it out onto a wire rack to cool completely.
    Banana Split Bread
    TOTAL TIME: 1hr 15mins PREP: 10 MINS COOK: 1 HR 5 MINS YIELD: 1 loaf Ingredients 12 cup butter 1 cup sugar 1 egg 2 large ripe bananas mashed 3 - photo 4 Ingredients 1/2 cup butter 1 cup sugar 1 egg 2 large ripe bananas, mashed 3 tablespoons milk 2 cups flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1 cup chocolate chips 1/2 cup chopped pecans Directions
    1. In a bowl cream butter and sugar.
    2. Beat in egg.
    3. In a second bowl combine milk and mashed bananas.
    4. Combine flour, baking soda and baking powder.
    5. Add to cream mixture alternately with banana mixture.
    6. Fold in pecans and chocolate chips.
    7. Pour into greased loaf pan
    8. Bake 350F 60 to 70 minutes.
    9. Cool 10 minutes before removing from pan.
    10. Complete cooling on wire rack.
    Hawaiian Banana Bread
