First of all, I would like to thank my husband, Steve Santoro. Without him this book may never have been completed. He is my rock, my biggest supporter, the love of my life, my best friend, and my official recipe taste tester. He shares my passion for making the world a better and healthier place. He is one of the most creative people I have ever met and the idea guy behind this project and a lot of what we do at The Naked Label. Im so lucky to have him in my life.
I would also like to thank the dynamic duo team that helped manage this project at The Naked Label. Ashley Anderson and Nathalie Norris were the superstars behind coordination, food preparation, and photography. The effort and commitment of these two ladies has made this project a reality. Many long hours went into creating this book and I sincerely thank them for their awesome contribution.
A special thank you to the incredible group of individuals who helped with preparing the food for photography: Ashley Anderson, Esther Epp, Jennifer Southward, Tim Condon, Emily Smalley, and Melissa Ziaei. This involved very long days, creativity, and high energy. They were amazing! One look at the food in the pictures throughout the book and you will see what an incredible job they did.
To the brilliant Holistic Nutritionists who helped write the nutritional benefits: Chloe Elgar, and Semhar Ghedela. Their expertise and support has been invaluable. They make learning fun and they do a great job illustrating how beneficial these recipes are for our health.
To my incredible graphic designer Stasia Blanco for making this book look so incredibly beautiful. To my cover photographer Brooke Palmer for making me feel comfortable and being so committed to capturing the perfect photo. To Bree Powell for helping me look and feel my absolute best.
To my parents, Jennifer and Ken Southward, for always feeding me healthy food and for introducing me to whole foods at a young age. They have been the inspiration behind my journey and I am forever grateful for their guidance and support. I also want to thank them for allowing our team to take over their kitchen for some of our food photography days. What a great space to cook. Also a special thank you to my mom for helping with food preparation and clean up! You are amazing!
To Rhonda Richer and Tim Lipa for graciously allowing us to use their kitchen and dishes to complete a number of our food photos. The photos are what brings this book to life and we couldnt have done it without them!
To my brother Scott Southward for being such a good friend, for teaching me to not take life too seriously, and to have fun along the way.
To Christine Waldner and Jenny-Lou Santoro for helping to edit this book. Your editing skills are exceptional and I am so grateful to have you both in my life. A special thank you to Vince Santoro for your outstanding help with set design.
To the rest of my family and friends for all your support, for making my life so much fun, and for being the people who light me up every day.
And most importantly, a special thank you to all the wonderful contributors. Without their support and delicious recipes, this book would not exist. I am forever grateful for their excitement in this project and their creativity in the kitchen. I think that what they are all doing to help create a world where everyone can be healthy and feel fabulous is amazing. k
introduction
Written by Briana Santoro, Founder of The Naked Label
Welcome to The Naked Label cookbook! Putting this project together has been a dream come true for me. Back in 2007 I decided to leave the world of Business Strategy Consulting and pursue my deep-seated passion for food. I went back to school to become a Holistic Nutritionist and have been on a mission to transform the world ever since. Im out to create a world where everyone can be healthy and feel fabulous.
I say can because I believe being healthy is a choice. However, I also believe that the state of the world we currently live in makes this choice challenging. Daily we are bombarded by mixed information and messages, including from companies who prioritize profits over our health and from organizations who cater to big industry interests. The end result is that we are told we can eat anything and everything as long as we do so in moderation. Unfortunately, this advice isnt working. People are getting more and more sick, and our food system is becoming more and more damaged. I started The Naked Label because I wanted people to have access to trusted information about the food we eat, so true health can be a choice.
In 2012 I asked The Naked Label community what more we could do to help them be healthy and feel fabulous. The overwhelming majority said they wanted more recipes! This was great news for me since I had a dream of creating a cookbook. However, when choosing what kind of cookbook I wanted to create, I realized that I wanted a book that was more than just an accumulation of my recipes. I wanted to create something that would initiate a movement, a book that eliminates the confusion about food and what is right to eat. A book that shows people that eating healthy can be delicious, simple, and a boatload of fun! A book that brings families together and creates incredible friendships through scrumptious food that inspires us to connect around a dinner table. A book that creates bodies that are healthy, full of energy, youthful, and vibrant. Ultimately, a book that transforms our relationship with food. Radical idea for a cookbook? Maybe. A cookbook whose time has come? Definitely!
