Introduction

As a young child, Jessica Kellaway enjoyed cooking and baking. She spent Sunday mornings cooking a large brunch with her mother and afternoons cooking real food dinners as a family. She was always known tobe health conscious, asking many questions about what types of foods werethe healthiest for her body. She began reading nutrition and ingredient labels when she was in her early teens.

When Jessica began attending nutrition school, she realized a lot of the healthy foods she was eating were really not healthy for her at all. Determined that she would still enjoy her favorite foods, she began to swap unhealthy ingredients for healthy ingredients and quit eating processed, packaged foods. After a couple months of eating real food (no processed or packaged foods), she attended a birthday party. The menu consisisted ofnormal party foods and sweets. She was surprised to notice that the foods she had loved so much before actually did not taste as good as they used to. Itwas then that she began to post on social media about healthy swaps, healthy recipes, and her personal favorites. Within months, she was asked to put together a cookbook.

Healthy by Choices mini cookbook was born in Jessicas kitchen. Itconsists of some favorite recipes that she has made for her husband and other family members. They are simple recipes, nothing too fancy. Enjoy the first cookbook from Jessica Kellaway!

A note from Jessica....

Soups are my favorite comfort food. To me, there is nothing better than curling up on the couch with a warm bowl of soup. They have the potential to nourish the body back to health. My favorite thing about soups is that they are so versatile. You can easily add in an ingredient or take one away. My soups all have the potential to be vegan, vegetarian, or paleo to meet your nutritional needs. Soups can also just be a pot filled with random ingredients and some broth!

You will come across the term Bone Broth in many of my recipes, whether in this book oron my website. Bone Broth is made by simmering the bones of the highest quality bones you can find. Using quality ingredients in your cooking is so very important, but especially when you are making bone broth. Bone Broth is meant to be a healing and nourishing food, meaning you need the most nourishing ingredients possible. If you see the words Organic, Free Range, Pasture Raised, or Grass Fed that is a really good start! Many people have found relief to digestive upsets, skin disorders, and autoimmune disorders by doing what is calledThe Bone Broth Challenge. The Bone Broth Challenge is when you have a cup of Bone Broth every single day for a month and see if there is improvement in your health and how you are feeling! There are tons of different recipes and ways to go about making your own Bone Broth online and there are a few great companies as well!

Below I have shared my favorite recipe for Bone Broth:

Day 1
~In a large pot (or crock pot) place one pound of bones (or carcass of a chicken or turkey), 2 Tablespoons of Apple Cider Vinegar, and cover with water.
~Allow this to cook on low for about 24 hours.

Day 2
~Add in your favorite vegetables and herbs. (My personal favorite are carrots, parsnips, celery,onions, garlic, rosemary, and parsley.)
~Fill to the tip with more water and allow to cook for another 24 hours.

At the end of 48 hours, strain the broth and enjoy!For my favorite Vegetable Broth:

Ingredients:
4-5 ribs of celery
1 large onion
2-3 potatoes (sweet or white)
1 clove garlic
4-5 large carrots
Your favorite herbs & spices

Directions:
Combine ingredients in a large stock pot & cover with water.Bring to boil, allowing to boil for 15-20 minutes
Cover and remove from heat for 10 minutes.
Enjoy!

Soups....
Creamy Broccoli Soup
INGREDIENTS:

-2 Tbsp Avocado Oil
-2 Cups Diced Carrots
-2 Cups Chopped Broccoli (usethe stalks with the florets)
-1 Small Onion, Diced.
-3 Cups Broth (Turkey is myfavorite in this recipe)
-2 Cups Half & Half (Or 1 Can Full Fat Coconut Milk if you are vegan or paleo)
-2 Tsp Garlic Powder
-1 Tsp Healthy by Choice

Thanksgiving Spice Blend
-1/2 Tsp Black Pepper
-1/2 Tsp Pink Himalayan Sea Salt.

*If you plan to add chicken to this, add 1 chicken breast or2 chicken thighs. Also add an extra cup of broth.

DIRECTIONS-In a stock pot add oil carrots onions and broccoli Sautee until - photo 1
DIRECTIONS
-In a stock pot, add oil, carrots, onions, and broccoli. Sautee until fragrant.
-Add in the Broth and bring to a boil. Boil until the carrots start to become soft.
-In a blender, combine the broth & vegetable mixture and then add in milk. Blend well.
-Turn the heat down to low-medium heat and return the mixture back to the pan.
-Add in spices and cook on low for 5 minutes.

*If you are adding chicken to this recipe, add the chicken in during the last step. Add in the extra cup of broth and the chicken. Dont allow this to boil or the chicken will become hard. It should take about 10 minutes for the chicken to cook thoroughly.

-You can garnish with shredded cheddar cheese for extra flavor!
