Introduction
There is perhaps no other food in the world that has gained such a popular following than hot sauce itself. What is there not to like about hot sauce? It is great for you, it is highly addictive, it is hot, it can often times be funny, it is packed full of flavor and above all it is absolutely delicious.
We each have our stories of the first time we tried hot sauce and how we spent countless minutes fighting off the heat that consumed our very bodies. However, the one thing that we all have in common is that after we went through the torture of tasting hot sauce for the first time, we soon began putting on everything we ate. For me I personally started to pour hot sauce on pizza, rice, beans, chips and fish to give it all a powerful kick.
Hot sauce is incredibly versatile and is perhaps considered to be the most efficient condiment that you can find today. You can use it to dress up virtually anything from corn chowder to Chinese Lo Mein. The moment that you realize that hot sauce can add flavor as well as heat to anything dish you may make, just like me you will soon become hooked.
In this book not only will you find a wide variety of recipes that will help you make your very own hot sauce to help you add more flavor to your favorite dish, but you will also find helpful tips on making your very own hot sauce ranging from mild to blow your head off hot.
So, without further ado, lets get cooking!
Chapter One: Different Types of Hot Sauces
There are basically two kinds of hot sauces that are available today: Non-Blended and Blended. Just as the name implies the blended type of hot sauce consists of ingredients that are perfectly mashed together, pureed or thoroughly combined. In the non-blended variety the sauces are left completely whole and you are most likely to find them in places such as Puerto Rico and Hawaii.
Throughout history hot sauces have been categorized and defined simply by the country they have originated from. Of course throughout history, the popularity of certain types of hot sauces have raised and lowered throughout the ages and in this chapter you will learn what are the popular types of chilies used today to make the hot sauce and how each can play a role in how spicy the sauce turns out to be.
1. Amarillo Chili- this type of chili is usually four to six inches in length and contains a very thin flesh that is packed full of citrusy flavor. This type of chili is commonly found in the mountains of Peru and is orange and red in color. You will most likely find this type of chili in a traditional Peruvian dish known as ceviche. It is mostly used as a substitute for a habanera pepper.
2. Anaheim Chili- This type of chili is most commonly known as a long green chili and is bright green in color. It is packed full of a rich vegetable flavor and is the perfect chili to use if you are making a dish that is roasted. If you have never heard of this chili before know that it is most commonly used to make both ground chili powder and ground paprika. If you were to travel to California or Mexican you will most likely find these chili peppers strung up in doorways or kitchens, where they will either be used for decoration or to be used for future use.
3. Ancho Chili- typically referred to as the dried version of the Poblano chili, this chili pepper is mahogany in color with distinct wrinkles in its appearance. It is very sweet to taste and is mild in spiciness, making it a perfect chili pepper if you are looking to add a woodsy and rich flavor to your dish. You will most commonly find this type of chili used in many traditional Mexican dishes.
4. Arbol Chili- this pepper is skinny and papery to the touch, but contains a slight grassy flavor that is surprisingly appealing. This type of chili is commonly referred to as the Rats tail or Birds beak chili. It is usually the length of a thin finger and is often used in its fresh form, dried form or powdered form. With their very bright red color, they are also used to make Christmas decorations.
5. The Bell Pepper- probably the most popular chili pepper that you will find in America today. This type of pepper comes in three colors: red, yellow or orange. This pepper is mild in taste and contains a very sweet and vegetable flavor to it. Most commonly you will find these peppers stuffed, grilled, roasted or finely chopped to be used in common hot sauce or salsa recipes.
6. Cayenne Chili- ranging between 5 to 10 inches in length, the cayenne chili is very thick in width, with a skin that is slightly wrinkled. This chili pepper can be commonly found growing in many home gardens where it is then ground into a fine powder. This chili originated in South America where it became a food staple found in most kitchen cabinets.
7. Chipotle Chili- this chili is coffee brown in color and only a few inches in length, but it does pack quite a punch. Filled with a smoky flavor and relatively hot in taste, this is a chili that can be found being used in most traditional Mexican dishes today. It helps to bring a rich and smoky flavor to most dull dishes and it is one chili pepper that can be used to make even the spiciest of hot sauces.
8. Habanera Chili- perhaps one of the most popular chili peppers known to man, this is one chili pepper that many people turn to when they are looking to bring a little spice in their life. Often times you can find these pepper red or yellow in color when they are ripe and it is often recommended that you use gloves in order to handle these peppers safely.
9. Jalapeno Chili- originating from the heart of Mexico, this pepper is about three inches in length and is popularly known for its spiciness and strong vegetable flavor. You can commonly find these peppers in many popular sauces, meats and toppings as they are considered the star of the entire chili pepper family.
10. Poblano Chili Pepper- this is yet another chili pepper that is popular among Mexican cuisine today. It is long in length and often cooked or roasted. You can find this chili pepper often served in mole sauces or other traditional Mexican sauce dishes.
This is only a handful of the many chili peppers that exist today and if I were to write about the hundreds that exist, this book would be over one thousand pages long. All of these chili peppers can be found in many popular hot sauces today and can help liven up a rather dull dish. So, regardless if you are a fan of habanera chili peppers or cayenne, you will never find an end to the many uses these peppers.
