Calling all Super Foods. It is code green, orange, yellow, red and no color barred for this brunch. Join me in the kitchen as I prep, cut up, saut, poach, grill and bake for the guests. Lets showcase who has the best nutritional facts, look great on the menu and has the best spot in the recipe. Hooray for the Super Foods!!

This eBook is another creative idea that GOD has given me. This is how Brunch with The Super Foods was developed. On January 13th, 2015 our church was on a corporate fast. That evening I was sitting and thinking How can I showcase red beets? I got the idea to first develop a menu. The use of super foods along with the beets is how this eBook began to take shape.
I have researched and present to you some dishes that include the Super foods. To me, the project is mile high with flavor and creativity. I am trained to research, think outside of the box, create, cook and then present foods that are healthy, imaginative and tasty. As the host or hostess of this event, serve these dishes to your family and friends in a style that has your touch. So here is a classic style brunch or buffet for this occasion.
A classic brunch consists of these stations, Omelette, Garde-Manger or Cold Food, Hot Foods and Dessert. The featured Super Foods in the menu include Poached Eggs for the breakfast part of the brunch. You can scramble the eggs or make an Omelette if you wish. Eggs are a Super Food and a good source of Vitamins B2, B12, D, and E. Mandarin Oranges in the orange sauce served with the French Toast are also Super Foods. The Beet Soup is un-beetable, spicy or mild it definitely has a beat of its own. On the fruit station are these Super Foods, strawberries, blueberries, oranges and pineapples. The salad station is loaded with Super Foods such as carrots, onion, tomatoes, peppers, red cabbage, corn and walnuts.
Tuna in the veggie Tuna Dip is also a Super Food. Carrots and chia seeds in the Carrot Ginger Chia Smoothie makes the drink a Super Express. One of the entres featured is Pasta Primavera. It is tossed with spinach which is a cruciferous vegetable and a Super Food. The other course featured is Chicken with a Beet Barbecue Sauce, beets with tomato included in the sauce are Super Foods. May I present dessert? Its a Beet Pineapple Upside Down Cake. Would you like a sliver or a slice? I have put some love into those Beet Oatmeal Cookies. Try them and see for yourself. Beets in the Pineapple Upside Down Cake and oats in the Beet Oatmeal Cookies are also Super Foods.
So I present to you, Brunch with The Super Foods. Take time out to prepare the brunch or buffet for family and friends. Bon Apptit.
I bring my gifts of cooking and baking from about age fourteen until now to you. Cooking began for me as I was growing up and watched my mother, who was a teacher, bake and cook all kinds of dishes. Cook books were always around the home so I would read recipes and try to prepare something creative. My mom gave me confidence when she allowed me to take Home Economic classes and handed me some of her treasured dishes to showcase the food in.
I remembered that on my way home from one of my cooking classes, I broke one of the dishes but my mom said, It was okay, accidents do happen. I am not shy to say some dishes did not come out well. I remember following a recipe to make a 1234 Cake. While pouring the batter into the cake pan, there was extra batter so I filled the pan up. During the baking process, the cake batter rose up, had a volcanic moment, erupted, and lava, (batter) covered the bottom of the oven. It was a major calamity with smoke in the oven and DEEEEEP cleaning was required. The lesson I learned from that incident was that baking is precise. You have to carefully measure, weigh ingredients, and follow the recipe at all times.
My mother went a step further and gave me free range of her kitchen and the appliances at our home. I could say to her now, Mom was that wise? Her response would be, That is how you practiced, made mistakes, and gained confidence. I can say that early kitchen grooming is why I think out of the box and if a dish does not come out right, I press in, re- evaluate what I did, re-start and correct it. In my life, I press in no matter what obstacles, where and how. No giving in or up. I commit everything to GOD and trust HIM.
My Aunts, Joyce and Cordella, definitely encouraged me. They purchased cook books and every imaginable cooking gadget to enhance the gift God gave me since I was a teenager. So my parents, sisters, our brother, along with family members began to try my cooking and baking real early. They are still around to talk about the adventures. I guess since they were the first persons to try what I made, they were my first guests. I remember the cake that I made for the Tea Party at Church. The cake and icing were all made from scratch. My mom insisted I could do it. She was right!
I signed up to participate in a special cooking exam when I was in high school and got over my head. I put on the menu that I would make a Pineapple Upside Down Cake among other dishes for a picnic menu. I got to the exam and was told you cannot use canned pineapple. There was a time allotted for that exam and I had to peel, trim the pineapple, slice it, poach the fruit, and prepare the cake batter from scratch. That was just the dessert. What about the other dishes on the menu? I was definitely in a pressure cooker mind set. Time was going and I had a few more dishes to prepare. Thank GOD I finished the assignment and passed the exam.
