Fried Roast Beef Sliders
Try different cheeses!
Makes 8 sandwiches
Ingredients
- 4 slider buns
- 4 slices roast beef
- 4 slices pepper jack cheese
- Tbsp. garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- beaten eggs
- 2 cup buttermilks
- 4 cup breadcrumbs
- Vegetable oil for frying
Directions:
Layout bread, top with roast beef and cheese; cut each sandwich into 4 triangles; mix together eggs and milk; in another bowl mix together breadcrumb then dip each triangle into egg/milk mix then into the breadcrumbs; shallow fry 2-4 minutes on each side or until golden brown
Chicken Wraps
Great with homemade fries!
Makes 2 wraps
Ingredients
- 2 wraps
- 2 cups shredded chicken
- 1 tablespoon fajita seasoning
- 4 diced quartered tomatoes, divided
- 1 cup shredded lettuce, divided
- Tbsp. minced garlic
- 1 tsp chili powder
- 1 tsp celery salt
- tsp cumin
- 1 cup shredded Monterey Jack
Directions:
Layout wraps, top with chicken, tomato, lettuce, garlic; sprinkle with chili powder, celery salt, cumin; top with cheese
Pork and Cheese Roll
If desired, brown the ham first!
Makes 12 wraps
Ingredients
- 10 slices deli pork
- 10 slices provolone or mozzarella with tomato and basil
- 3-4 sheets of puff pastry
- 1 tsp celery salt, black pepper
- stick butter, melted
- Tbsp. garlic powder with parsley
Directions:
Preheat oven to 350-400 and prepare baking tray
Layout pastry, top with slices of ham, cheese, celery salt, pepper; roll; place on tray bake 30-40 minutes
Red Curry Turkey Soup
Green curry is ok too!
Makes 4 servings
Ingredients
- 2 Tbsp. olive oil
- 2 cups shredded turkey
- 1 tsp red curry powder
- 3 cups water
- Tbsp. garlic powder with parsley
- 2 diced roasted red pepper
- 2 cups of kale
- 2 diced carrot
- 1 onion diced
Directions:
Combine oil, turkey, powder, water, garlic powder, red pepper, kale, carrot, onion; bring to boil, reduce heat, cover, let simmer 10-15 minutes
Salmon and Pesto Cakes
Great way to use up basil!
Makes 2 servings
Ingredients
- 1 Tbsp. oil
- 2 large salmon filets, diced
- 8-9 basil leaves
- pine nuts
- 2/3 cup parmesan cheese
- 1/2 cup olive oil
- 1 cup flour
Directions:
Preheat oven to 350 and prepare baking tray
Combine basil, pine nuts, cheese, oil in food processor; blend; over oil cook salmon 2-3 minutes; let sit 5-7 minutes; chop and put in food processor along with pesto; give 2-3 short bursts but do not puree salmon, chunk it; form tiny bits of mixture into balls; flatten; cook 15-25 minutes
10 Minute Au Jus Sliders
Why slave over dinner?
Makes 6 sliders
Ingredients
- 6 slider rolls
- 4 cups shredded roast beef
- 1/2 can beef consume
- 2/3 cup water
- 2 Tbsp. bell pepper trinity mix (three colors of diced green peppers)
- 6 slices Swiss cheese
Directions:
Combine: broth, water, shredded meat, and peppers for 10-12 minutes; put in roll, top with cheese, broil 2-4 minutes until cheese melts
Thyme Breakfast Biscuits
Great with links and syrup too!
Serves 4
Ingredients
- 1 roll frozen biscuits
- 1 roll breakfast sausage, browned and drained
- 4 slices mozzarella cheese
- 1 tsp thyme
- Top biscuit with pork, cheese, thyme; bake as directed per biscuit package
- Italian Grilled BLT
- Great for garden fresh tomatoes! Makes 2 sandwiches
- 4 slices Italian bread
- 2 Tbsp. pimento cheese
- 8 slices turkey bacon
- 4 thick slices of tomato
- 2 pieces of lettuce
- 4 slice cheddar cheese with habanero
Directions:
Layout bread, spread pimento on one side and butter the other, put butter side down, top with lettuce, tomato, bacon, cheese; warm over griddle 4-6 minutes
Broccoli Salad Sandwiches
A perfect lite brunch!
Makes 2 sandwiches
Ingredients
- 4 pieces French bread
- 1 cup lemon mayo
- 1 cup broccoli salad
- 1/2 cup lemon juice
- 1 Tbsp. brown sugar
- 1/3 cup parmesan cheese
Directions:
In a bowl mix together lemon mayo, broccoli salad, lemon juice, brown sugar; cheese; spoon onto bread
10 Cherry Coffee Cake
for office parties or gatherings!
