W ITHOUT THE LOVE AND SUPPORT of a lot of people this project would not have been possible. My brother, Bubba, and sons Jamie and Bobbyalong with the entire staff at The Lady & Sonsallowed me to leave the restaurant to give birth to this book. They all rose to the top like the finest cream. Thank you all so much for being the people that yall are. I love each and every one of you so much.

A warm thanks goes out to the hundreds of thousands of yall who have graced us with your presence at The Lady & Sons. Ive had the privilege of personally meeting so many of you. Yall are so sweet with your thanks for the food we so lovingly prepare for you, and some of you come bearing recipes, offering to share with us your family traditions and memories. A heartfelt acknowledgment goes out to yall: Sybil Barnett; Carol Berendt; Douglas Boyce; Lynn Boyter; Lauren Burke; Bob and Julia Christian; Captain Judy Helmey; Clarys; LeAnn Coleman; Sandra Cowan; Carolyn Cundiff; Joan Duke; Susan Dupuy; Lynn Ekfelt; Beth English; Paulette Faber; June Foster; Damon Fowler; Nancy Girard; Jane Gottschalk; Gabriels Desserts; Johnnie Gabriel; The Gastonian; The Granite Steps; Marvin Hamlisch; Shaun Hawkins; Beth Hiers; Laura Holland; Brenda Hollis; Theresa Jaworski; Sean Jones; Olivia Lanier; Ludovic Lefebvre; Marge Maddox; Jackie Mullins; Donna Pickard; Nancy Skains; Pam Strickland; Rachel Strickland; River Street Sweets; Nan Tatum; and Robin Wilson.

I cant put into words the way I feel about my editor, Sydny Miner. She showed the most wonderful care and consideration in that kind Sydny way. My publicity director, Ginger Barton, also a Georgia girl, has worked tirelessly on my behalf. Jeanne Strongin, the photographer who was able to capture the handsomeness of my sons Jamie and Bobby, even took an old woman and made her look not half bad. To Jackie Seow, the art director, and Kevin Hanek, the book designer, thanks goes to both of yall for your enthusiastic support and efforts on behalf of this project.

A million thanks goes to Jonathon Brodman, copy editing supervisor, and to Virginia McRae, my copy editor, who had to learn how to speak southern.

Thank you, thank you, thank you: to my cousin Don Hiers, who sat patiently and lovingly by my side at the computer for many hours, and challenged me to do my best.

And last but not least, to my personal agent, Barry Weiner, along with Lydia Wills, my literary agent; Barry, how lucky I am to have someone who has never quit believing in me.

A Word from Paula

H EY, FRIENDS, IT SEEMS LIKE JUST YESTERDAY that I was writing the preface for this wonderful little book. The Lady & Sons Just Desserts has a very special place in my heart because it represents the huge change that took place in my life while it was being written. Could it really have been four years since my dogs Otis and Sam ran away from me and straight into Michael Groovers arms? Little did I know that Sam and Otis had such great taste! With no effort they found the man who would become my husband and my best friend. How appropriate that I was finishing up a dessert book when I met the best dessert a girl could hope to have! So I think yall can understand why this book holds such sentimental value for me. Not only are the recipes wonderful, but now I have someone to serve them up to.

All my new books are in hardcover with wonderful color photographs of some of my favorite recipes. While the spiral-bound format does have some pluses, nothing can take the place of a hardcover book. With care hardcovers can literally last forever, and Im so happy that The Lady & Sons Just Desserts will now fall into that category. Hopefully this book and my marriage will last forever!

I do know that a lot of the recipes in this book youll want in your files for the rest of your life. One recipe that you dont want to miss is Not Yo Mamas Banana Pudding! No matter where I go, from California to New York, someone always comes up and hugs and thanks me for sharing this great little recipe. The Blueberry Dumplins, Gooey Butter Cakes, Pecan Dreams, Key Lime Grits Pie, Jamies Coconut Cake, Bobbys Caramel Cake, and the Pine Bark candy all received great reviews, which really warms my heart because a recipe is no good if it works only for me. I hope that for those of you using this book for the first time you will love it has much as others and myself do. For those of you who have enjoyed The Lady & Sons Just Desserts in its original form I hope will be as thrilled as I am to now have it in a long-lasting hardcover.

As always I send you love and best dishes, from my kitchen to yours,
