Food Consumption in the City
Food consumption patterns and practices are rapidly changing in Asia and the Pacific, and nowhere are these changes more striking than in urban areas. This book brings together researchers from environmental studies, anthropology, sociology, tourism, architecture and development studies to provide a comprehensive examination of food consumption trends in the cities of Asia and the Pacific, including household food consumption, eating out and food waste.
The chapters cover different scales of analysis, from household research to national data, and combine different methodologies and approaches, from quantifiable data that show how much people consume to qualitative findings that reveal how and why consumption takes place in urban settings. Detailed case studies are included from China, India, Japan, Malaysia, Philippines, South Korea and Vietnam, as well as Hawaii and Australia. The book makes a timely contribution to current debates on the challenges and opportunities for socially just and environmentally sound food consumption in urbanizing Asia and the Pacific.
Marlyne Sahakian is a Senior Researcher in the Faculty of Geosciences and the Environment at the University of Lausanne, Switzerland.
Czarina Saloma is Associate Professor of Sociology at Ateneo de Manila University, Philippines, and recent Alexander von Humboldt Foundation Fellow at Bielefeld University, Germany.
Suren Erkman is Associate Professor in the Faculty of Geosciences and the Environment at the University of Lausanne, Switzerland, where he manages the Industrial Ecology Group.

Erik Akpedonu, Research Associate at the Institute of Philippine Culture of Ateneo de Manila University, studied Architecture at the Lippe University of Applied Sciences in Germany. He is co-author of Endangered Splendor: The Architectural Heritage of Manila (Ateneo de Manila University Press, forthcoming) and Casa Boholana: Vintage Houses of Bohol.
Magnus Bengtsson is Principal Policy Researcher at the Institute for Global Environmental Strategies (IGES) based in Japan. He is currently in charge of institute-wide flagship initiatives and was previously Head of Sustainable Consumption and Production Research. He has a PhD in Environmental Systems Analysis from Chalmers University of Technology in Gteborg, Sweden, and was a post-doctoral fellow at the University of Tokyo before joining IGES.
Kyle Datta is general partner of Ulupono Initiative, a Hawai'i-focused social investment organization dedicated to improving the quality of life for island residents by creating renewable energy, increasing locally produced food and reducing waste. Formerly, Kyle was CEO of U.S. Biodiesel Group and served as Managing Director of Research and Consulting at the Rocky Mountain Institute, where he co-authored Winning the Oil End Game and Small is Profitable.
Rune-Christoffer Dragsdahl is a Phd Fellow at the Department of Cross-Cultural and Regional Studies at University of Copenhagen (20142017). His current research is on agricultural connections between India, Mozambique and Ethiopia. He was an Assistant Lecturer in Anthropology at University of Copenhagen (20122014) and External Lecturer in Food Systems at Danish Institute for Study Abroad (20132014).
Judith Ehlert is a sociologist and holds a postdoctoral position in Development Sociology at the University of Vienna's Department of Development Studies. She is the leader of the research project A Body-Political Approach to the Study of Food: Vietnam and Global Transformations, which is funded by the Austrian Science Fund (FWF). Besides food, identity and body politics, her research interests include humannature interfaces and the sociology of knowledge.
Suren Erkman is Associate Professor in the Faculty of Geosciences and the Environment at the University of Lausanne, where he manages the Industrial Ecology Group. He teaches and publishes around the themes of sustainable resource management, eco-industrial development, industrial symbioses and eco-innovation, with recent work on food consumption and energy transitions.
