Chapter One Garlic's 5,000-Year History
The "stinking rose" is featured in the Bible and in Homer's Odyssey. Aristotle, Hippocrates, Galen, Aristophanes, Virgil and Pliny were very familiar with this miracle healer for conditions which could fill a medical dictionary. Transylvanian peasants hung garlands of it over their windows and doorways to ward off vampires.
Until the turn of the century, no doctor's "black bag" would be without it. Albert Schweitzer used it at his clinic to treat an astounding variety of diseases. In World War I, battlefield physicians successfully prevented gangrene with poultices soaked in the juice of what later came to be called "Russian penicillin."
Still, it was relegated to folklore. Today, scientists are taking a serious look. In fact, in the past two decades, 2,000 studies conducted by the world's top researchers have established garlic's potential impact on the most serious modern diseases.
