Chapter One
THE HISTORY AND MAKING OF VINEGAR
It Didnt Just Fall Off the Applecart
As far back as 5000 B.C.E., vinegar was made by the Babylonians, who did this by fermenting the fruit of the date palm. Ancient Egyptian urns dating back to 3000 B.C.E., when analyzed by modern scientists, have been found to contain vinegar residues; early Greek and Roman artwork featured vessels of vinegar. In 400 B.C.E., Hippocrates, the father of modern medicine, prescribed vinegar for a variety of ills.
During Biblical times, vinegar was used to dress wounds and sores, speeding their healing. Vinegar is mentioned no less than eight times in the Bible, with four references in the Old Testament and four in the New Testament. During the time of Jesus Christ, vinegar was valued both as a condiment and a medicine. Ruth 2:14 states, Boaz said unto her, At mealtime comest thou hither, and eat of the bread, and dip the morsel in the vinegar. In the Holy Land, two stone jugs were kept in the jails next to the wall where prisoners were bound for flogging. One contained soothing, healing oil, and the other contained antiseptic vinegar.
