A n often-quoted African proverb says that it takes a village to raise a child. As you now hold in your hands the sixth book weve produced in the Flat Belly Diet! series, we can assure you the same can be said for bringing books into this world, too.

In fact, its difficult to acknowledge all of the people who helped make this book come to life, but Id like to start with the people who made sure it would be beautiful and easy to use: Jill Armus, Preventions gifted creative director; Helen Cannavale, photo director, who assembled the amazing talents of Con Poulos, photographer; Pam Morris, prop stylist; Vivian Lui, food stylist; and Elsa Isaac, fashion stylist. Once again, youve given us something that makes us proud. Great job, everyone!

Very special thanks to Gregg Michaelson, Karen Rinaldi, Beth Lamb, Bill Stump, and Marlea Clark. To Robin Shallow, who never met an idea she didnt improve, and to Bethridge Toovell and Lauren Paul, who are tireless in their enthusiasm, support, and belief in this plan. Thanks also to Susan Graves, Courtenay Smith, and Polly Chevalier for their wise counsel and endless, sunny support. My gratitude to original Flat Belly Diet! coauthor Cynthia Sass, MPH, RD, and former brand editor Leah McLaughlin, who were critical to developing the original plan upon which this is all based.

Thanks are also due to the diligence of the behind-the-scenes book crew led by Andrea Au Levitt, Carol Angstadt, Chris Krogermeier, Hope Clarke, Brooke Myers, and Elizabeth Krenosyour teamwork provided the glue that kept this project, as well as several others, moving forward and on track. Thank you!

We were grateful to have recipe developers Shea Zukowski, David Bonom, and Sharon Sanders craft more great-tasting dishes for this collection. We knew they would showcase all the best ways to work with MUFAs, and they didnt miss a step. Shea also did double duty as line editor and project manager extraordinaire. And for ensuring the utmost reliability in all our Rodale recipes, thanks to our vigilant test kitchen director, JoAnn Brader, and her assistant, Stacie Petrovich. Were also glad to have had veteran copy editor Kate Slate join the crew on this round with her fresh eyes and sensible suggestions.

My gratitude to the Rodale family and their special mission, that of inspiring people to live their whole lives. And my most heartfelt thanks, of course, to CEO Maria Rodale, a leader and a friend.

Finally, Sally and I would like to thank our families, especially our children (Olivia and Sophia Vaccariello and Henry and Sam Husenits) for being an endless source of inspiration and insight into childrens eating habits (and to Lori, Joni, Katharine, and Liz, who enabled us to work in peace!). And most importantly, huge thank-yous go out to our husbands, Steve Vaccariello and Joel Husenits, for so much encouragement and support through all the drafts, tastings, and late nights.

IF ALL THE OTHER DIETS AND THOUSANDS OF CRUNCHES YOUVE DONE havent made a - photo 3

IF ALL THE OTHER DIETS AND THOUSANDS OF CRUNCHES YOUVE DONE havent made a difference to your midsection, you might be surprised by this promise: You can target belly fat by eating rich, delicious foods every day that will also leave you full, energized, and excited about food. Its true! Thanks to groundbreaking science and the tenets of the healthiest diet in the world (the Mediterranean diet), Prevention was able to develop the Flat Belly Diet, a remarkably satisfying eating plan that targets belly fat and has helped thousands of people lose weight and keep it off.

Yes, I know it may sound incredible, but believe me, I know how exasperating belly fat can be. In countless letters and e-mails, Ive had people all over the world describe the strenuous workout plans and crazy diets theyve tried to target their trouble spots. Ive been there, too. Before the Flat Belly Diet, I had tried just about everything to shrink my postbaby belly (a belly that expanded to hold twin babies, no less!). But much to my chagrin, I discovered exactly what you did: It. Just. Wouldnt. Budge. What an amazing breakthrough when we developed the diet and saw firsthand how well it worked for people. Some people in our initial test panel lost as much as 15 pounds in 32 days! And their health markers improved as well.

To help confirm what we were seeing, I asked Dr. David Katz, director of the Prevention Research Center at Yale University School of Medicine, to evaluate the diet even further. His team assessed 11 overweight women with excess belly fat, ranging in age from 35 to 65, before and after they followed the Flat Belly Diet meal plan for 4 weeks (they skipped the Four-Day Anti-Bloat Jumpstart).

His findings after only 4 weeks were truly impressive. While the women lost an average of roughly 8.5 pounds and took an average of more than 1.5 inches off their waistlines, Dr. Katz also saw a significant decrease in overall abdominal fat (including fat in the liver), which was measured before and after with MRI scans of the subjects bellies. He also measured blood pressure, cholesterol levels, insulin sensitivity, and inflammationand in all areas he saw lower numbers, the type of changes typically associated with a reduced risk of heart disease, cancer, and stroke. We were thrilled!

Scientific backup is important, but in reality we knew this diet worked simply by the outpouring of letters wed received telling us so. And since our first book was published, weve listened carefully to what our readers said they wanted. We developed an online community Web site at www.flatbellydiet.com and adapted the diet for many different audiences, creating Flat Belly Diet! Diabetes and even Flat Belly Diet! for Men, for guys who want to get into the kitchen and discover the Flat Belly Diet for themselves. The truth is that the Flat Belly Diet provides an extraordinarily healthy way of eating for most people.

In fact, knowing the food on this diet has such wide appeal, I realized that theres really no reason anyone who is trying to lose weight and cook for her family should need to refer to separate cookbooks every night. After all, families are one of the greatest support networks that anyone who is trying to lose weight can have. Why not tap into that power by enjoying the same meals together? And the benefits certainly wouldnt have to stop there. For parents who are concerned about the dangers of childhood obesity, overhauling the familys eating style is obviously a good place to start. After all, when families share meals, lifelong patterns are developedgood habits that can serve them well into adulthood take root. Thats why we decided to create this latest collection.

Even if youre the only one in your house looking to lose weight, the food on this family-friendly plan will prove appealing and satisfying for everyone else, too. Youll find dozens of ways to make nutritious meals and snacks that are delicious to family members of all agesand while youre shedding inches and pounds, you can also feel good knowing that theyre reaping the benefits these the research, we uncovered healthier, more wholesome foods can offer, including a lower risk of obesity and chronic disease and a longer, healthier life.
