DEDICATION & ACKNOWLEDGMENTS
I want to begin by thanking my parents, who exposed me to the true farm-to-table experience living off the land in the Humboldt mountains during their hippie years. Both of you have been amazing examples of living life to the sound of your own drummom creating a successful business based on health, healing, and beauty, and dad living life as a true artist, seeker, traveler, veteran, amazing cook, writer, and builder. You both have inspired me in your own ways and given me the tools to start and run my own business while fully expressing my creativity.
I also want to thank all of the patients that I have treated over the ten-plus years in my Acupuncture practice. You showed me that the most important aspects of healing are to listen and acknowledge your pain, pleasure, defeats, and wins. You help me remember that the bottom line to all healing is love. Being witness to the power of Chinese medicine has changed who I am and how I think and I am forever in awe of this ancient art. I am eternally grateful for all the teachers along the way. Dr. Robert Marshall, you are a pioneer, an inspiration, and one of the smartest guys Ive ever met. George Conley, you take healing to a whole other level. Thank you for your work and dedication to your craft. I am also grateful to Barbara Custer for taking all my patients after I closed my practice and keeping me balanced during my challenges and changes. Finally, Kersten Marie, my friend and healer, you are the real deal and I love you.
I want to thank Jamie Shaw, without whom I could not have completed this project. I love sharing our foodie moments while sipping roasted dandelion tea. You got me from the beginning and have always helped me express myself. You are smart as a whip and you know what Im saying before I can end the sentence, which says it all. Thank you!
Thanks to Sally Ekus, my agent who helped me find the perfect home for this book at Weldon Owen. Jennifer Newens and Amy Marr, thank you for believing in this project and making it happen. Your insights have been invaluable and your kindness deeply appreciated. Thayer Gowdy, thank you for helping to realize my aesthetic vision with your beautiful imagery and ability to make me laugh and smile. I owe you a raw lasagne! To all the stylists and the creative team, you are the best.
I am so grateful to Cindy Crawford for believing in me and helping me shine a light on this knowledge to empower others for optimal health. Thank you for joining me on this journeyyou are an inspiration.
My Urban Remedy family: I am so grateful for all of your support and belief in my vision, especially my earliest supporters, The Science Inc. team, Marcelo, and the UR Brazilian beauties, Juliana, Roberta, and Alejandro. Ushi Patel, you crafted the heart and soul of Urban Remedy and helped make my dreams come true. Rachel and Jody, thank you both for your mad styling skills and friendship. And Mandypants, thanks for helping me all along the way, from our teeny, tiny shared kitchen to today and everything in between: babies, marriage, divorce. We need a vacation!
Heartfelt thanks to my BFF, Paul Stukin, for always believing in me (just please stop stealing my recipes). And much gratitude to the other angels in my life: Rach, Simmone, Nicole, Desi, Dana, Gina, Molly, Anna OD, John Wigmore, Sanna my fairy Godmother, and Suzie!
This book is dedicated to my angels in heaven: my Grandmother Ruth for her unconditional love and wild spirit and my father Frank Pasquale, a true one-of-a-kind man. I love and miss you both every day. And to my wildly alive son, Frankie Love. Sharing life with you is pure joy and my love for you is limitless.
FOREWORD
I met Neka through a mutual friend who knows Im always interested in finding new ways to use food to enrich and support my lifestyle. I was quickly impressed with her knowledge, her background in traditional Chinese medicine, and her passion for healing with foodnot to mention the delicious recipes she createsso we connected immediately. Today, she is my go-to resource for nutrition. I love that her approach is about health and life and enjoyment, not deprivation.
Like many people, I had heard plenty about juicing, fasting, and cleansing, but when I walked up to a juice bar, I felt overwhelmed with the choices offered, based on the often contradictory information out there. Do the ingredients always have to be organic or not? Should I worry about the high sugar content of many of the juices? How do I know which juice is the best one for me?
With Neka, I was happy to have a trusted voice to advise me about different ingredients and their associated health benefits. What I have learned from her has empowered me to make better-informed decisions. Whether its a four-day cleanse, a single day of clean eating, or a particular recipe to treat a common ailment, I look to Neka for delicious, healing recipes that will help me feel my best.
Even if Im not cleansing, I like to have a protein mealreplacement smoothie in the morning. I can drink it while I take my kids to school and then I have the energy for my workout. I also try to drink at least one green drink a day, so Im sure to get all the benefits and antioxidants that leafy green vegetables offer. With Nekas guidance, I have passed along healing recommendations that have helped my sister, and, amazingly, my husband has become a kale salad lover!
Today, my passion is helping to shine a light on people doing great work, so Im thrilled to recommend Nekas cleanse, as well as her general expertise and recipes. If I can use my voice to help more people discover the benefits Ive enjoyed from Urban Remedy, Im happy to do it. I know youre going to love the powerful knowledge and delicious creations that Neka sharesand that youre going to feel fantastic once you have put them to work in your own life!
To health and happiness,
Welcome to Urban Remedy
Over the course of my career as a nutritional consultant and acupuncturist, I have bridged my passion for health, cooking, and healing with an understanding of how to use food as medicine. And because I was raised in a health-conscious family, have practiced traditional Chinese medicine for over a decade, and live in the farm-to-table culture of Northern California, Ive always been surrounded by people who care about what they eat and who strive to eat for health as well as pleasure.
All of those factors led me to found Urban Remedy, a company that sells fresh, raw, cold-pressed organic juices and raw vegan snacks and other foods, in 2009. I started the company as a way to share with people the incredible benefits natural ingredients offer in preventing and curing so many common ailments. But even before that, I was making juices for 4- to 7-day retreats that I was leadinghealing getaways designed to remove people from their regular routines and habits, with the goal of rebooting mind, body, and spirit. What I observed on these retreats surpassed even my greatest expectations of what people might achieve in a short amount of time. Over and over again, participants described feeling transformative results by resetting body and mind over the course of just a few days.
