Welcome to Vietnam

I first visited Vietnam in 1991 when Hanoi was a socialist city of bicycles, faded French buildings and near-silence after dark. Times have changed. Today Vietnams capital is booming, as a metro network is constructed underground and glass-and-steel monuments of commerce puncture the night sky. The raw energy of the country is addictive, and I find myself returning every year to admire the Vietnamese peoples sheer lust for life, to feast on the best seafood in the world and to seek out that elusive, perfect cove beach.

Up north the climate is cooler and the influence from China more obvious, with soy sauce replacing nuoc mam (fish sauce) as the dominant condiment. Pho bo is the classic Northern dish, a richly satisfying beef broth best tried in Hanoi. Look out too for noodle dishes and (barbecued pork with rice vermicelli).
