I collect many cookbooks, but this one Ill enjoy giving to my friends and know that it will be used over and over again. Ill enjoy using it with my daughters, too, as they are now learning to cook themselves!

I have been struggling for years to provide good nutrition to picky and opinon-ated eaters; the strategies Liz and Janice offer are inspiring, totally realistic, and doable. I seem to have found something for everyone!! One of the greatest things about this cookbook is that the recipes contain ingredients that I would normally have on my shelf. Far too often when I try new recipes I have to buy ingredients that I use once and that sit on my shelf until the next time that I make that same dishif there is a next time! If I already have the ingredients, I am more apt to try new recipes. So I know that I will be trying many more of the recipes from your cookbook!

As a mother of four children ranging in ages from three to eleven, life sometimes gets in the way of good nutrition. Because of that I especially liked the Moms Best of the Bunch feature. Many times I have found myself staring at the grocery shelves full of hot dogs trying to find just one that has SOME nutritional value. The Best of the Bunch suggestions will be a great resource to help me keep some quick dinner options on hand without completely abandoning my nutritional standards.

I ts one thing to say you want to write a book but its another thing altogether to actually sit down 1 and do it. There were many people who contributed to the successful completion of this book. Writing a book with 120 recipes required a lot of time in the kitchen, mountains of dirty dishes (which Janices husband, Don, usually washed), and friends and family willing to taste and test them. Those who had no choice in the matter included our husbands, Don Bissex and Tim Carruthers, and our children, Carolyn Bissex, Leah Bissex, Josh Carruthers, and Simon Carruthers. You were the best guinea pigs we could have ever asked for. Thanks for tasting our recipes, both the fabulous ones and the flops, and offering your feedback. We are also grateful for your patience during the many hours that it took to research and write this book.
