Grandmas French Toast

Whenever my grandkids will be staying overnight, I buy a loaf of Italian bread for this recipe. The grandkids love to use a whisk to stir it up...they enjoy dipping the bread slices too. Its a fun, hands-on recipe for them. I mix one batch at a time. Its less messy and all the grandkids get a turn to help. I like to use my own grandmas cast-iron skillet...so many memories made!
2 eggs, beaten
c. milk
1 T. sugar
t. vanilla extract
1 t. cinnamon
1 T. butter
4 slices day-old Italian bread
Garnish: maple syrup
In a shallow dish, whisk together eggs, milk, sugar, vanilla and cinnamon until blended. Melt butter in a skillet over medium heat. Dip bread into egg mixture on both sides, one slice at a time, coating well. Add bread to skillet. Cook on both sides for about 4 minutes, until golden and egg mixture is set. May keep warm in a 250-degree oven until all slices are cooked. Serve with syrup. Makes 2 servings,2 slices each.
A yummy topping for French toast...combine an 18-ounce jar of apricot jam with cup orange juice in a saucepan. Bring to a boil and stir to blend; serve warm.
Oven Apple Pancake

This is a wonderful recipe to make on a cold winter morning. Add a platter of breakfast sausages for a great start to the day!
c. margarine, sliced
c. brown sugar, packed
cinnamon to taste
2 apples, peeled, cored and cut into -inch wedges
3 eggs, room temperature
c. milk
t. salt
c. all-purpose flour
Garnish: maple syrup
Place margarine in a 9" pie plate; melt in a 350-degree oven. Remove from oven; stir brown sugar into melted margarine. Sprinkle with cinnamon. Arrange apples in pie plate, overlapping in a single layer. Bake at 350 degrees for 10 minutes. Meanwhile, beat eggs in a bowl; add milk, salt and flour. Mix until blended. Pour batter over apples; return to oven. Continue baking for 20 to 25 minutes, until golden and apples are tender. Cut into wedges. Serve with syrup. Makes 6 servings.
