I have always been interested in healthy eating, but I first got involved in dairy-free cooking when my mum was diagnosed with colitis years ago and needed to change her diet as a result. Back then, it was still difficult to find products that could be used in place of milk, cream or cheese, but this has changed, with major supermarkets and health food shops now all stocking a good range of tasty alternatives. Deliciously Dairy Free will show you how to have fun and success in the kitchen without feeling that you are missing out.

Banana & Peanut Butter Smoothie
My daughter Scout loves this Banana & Peanut Butter Smoothie rich, thick and creamy, like an American diner-style milkshake. If you want it thinner, simply add a little more dairy-free milk or ice cubes. The .
MAKES 4 SMALL GLASSES OR 2 LARGE GLASSES
2 small bananas
3 tablespoons Instant
6 ice cubes
300ml ( pint) hazelnut, (for homemade) or soya milk
Place everything in a blender and blend until really smooth.
Serve straight away.
Strawberry & Vanilla Cream Shake
MAKES 4 MEDIUM-SIZED GLASSES
300g (10oz) ripe strawberries, hulled
2 teaspoons vanilla bean paste
250ml (8fl oz) soya, oat or (for homemade)
50ml (2fl oz) dairy-free single cream
ice, to serve
Place all the ingredients in a blender and blend until creamy and smooth.
Half-fill 4 medium-sized glasses with ice and pour over the shake. Serve straight away.
Cinnamon & Vanilla French Toasts with Bananas, Strawberries & Maple Syrup
A little bit of indulgence in the morning goes a long way simply swap in some dairy-free milk for a delicious start to your day.
SERVES 4
3 free-range eggs
300ml ( pint) (for homemade) or hazelnut milk
1 teaspoon ground cinnamon
1 teaspoon good-quality vanilla extract
