Food can be good or badthats a well-known fact. This cookbook Seafood Salads 365 Volume 1 explores a variety of ideas for unique, healthy, and easy-to-make Seafood Salads. Case in point: shrimp and eggs that are high in cholesterol, yet they dont affect the bloods cholesterol level. In addition, shrimp and eggs are necessary foods for a balanced diet. Another food misconception I want to debunk is the use of fat-free food that started centuries ago. Although it is a must to avoid fat for meat-based dishes, it hardly makes sense in salads. Its because the fats and oils in many salad dressings help the body absorb more fat-soluble vitamins (A, D, E, and K) found in fresh veggies. Seeds and nuts help in reducing weight, too. Isn't that great?
My wonderful husband and two children inspired me to produce this book. As a personal wellness and nutrition consultant, I traveled to Ukraine and Western Russia, the Caucasus, and Eastern Europe. Being a professional food specialist, I began to eagerly gather nuggets of cooking wisdom, examine them, and use them with success. After tying the knot, I began to serve various healthy and delicious meals to my family at the dining table. No harm has been done to their health! Chapter 1: Crab Salads

- Asian Crab and Cuke Salad
"This salad reminds me of the squid and seaweed salad served in japanese restaurants. It's a quick and easy lunch or light dinner. It would also be delicious with shrimp instead of crab."

Ingredients
- salt and ground black pepper to taste
- 1 (8 ounce) package imitation crabmeat, coarsely chopped
- 1 tablespoon white wine vinegar
- 1 tablespoon soy sauce
Direction
- Place cucumber slices in a bowl and season with salt and pepper. Toss in imitation crabmeat. Whisk vinegar and soy sauce together in a separate bowl. Pour over the cucumber and crab mixture and toss to coat.

- Asian Crab Cake Salad
"Crab cakes with an Asian twist. Delicious served on arugula or your favorite greens. Warm cakes will wilt greens. Drizzle with sauce and a pinch of salt. Sprinkle with sesame seeds for garnish. Another option would be to make these as bite-size cakes and serve as an appetizer."

Ingredients
- 1 cup panko (Japanese bread crumbs)
- 1 egg, beaten
- 2 tablespoons mayonnaise
- 1 tablespoon toasted sesame seeds
- 1 teaspoon chile-garlic sauce (such as Sriracha)
- 1 teaspoon grated fresh ginger root
- 1 teaspoon sesame oil
- 1/4 teaspoon soy sauce
- 1 pound fresh crabmeat, well drained
- salt and ground black pepper to taste
- 1/4 cup panko (Japanese bread crumbs)
- 2 tablespoons butter
- 6 cups arugula leaves
- 2 tablespoons mayonnaise
- 1 tablespoon chile-garlic sauce (such as Sriracha)
- 1 tablespoon rice vinegar
- 1 tablespoon lemon juice
Direction
- Mix 1 cup panko, egg, 2 tablespoons mayonnaise, sesame seeds, 1 teaspoon chile-garlic sauce, ginger, sesame oil, and soy sauce together in a large bowl; season with salt and pepper. Fold crabmeat into the panko mixture. Cover bowl with plastic wrap and refrigerate 1 hour.
