CONTENTS Becoming Vegan I never thought I would become a vegan. That may be strange to hear, considering this is a vegan cookbook, but I want to be honest about my journey. I always rolled my eyes a little at stories about celebrities becoming vegan and all the hoops people jumped through to stick to the diet. I was happy with my meat-and-cheese heavy lifestyle and didnt plan on changing.

Then one of my best friends became a vegan. I was really surprised when she broke the news. She wasnt one to jump on the latest diet trend or make decisions on impulse, so I really wanted to know why she decided to change her life. We had a lot of conversations about the food industry, how animals were treated, the health effects of different diets, and more. She opened my eyes about how food is brought to the table and how plant-based diets can be so much healthier. I didnt immediately decide to join her, but whenever we went out, I was open to vegan restaurants and trying new dishes.

When we cooked together, it was always vegan food, and I could see how tasty everything was. I started paying more attention to my own body, too, and noticed how it responded differently to veggie-packed meals without meat. I felt better, and I wanted to always feel that way. When I decided to become a vegan, I knew it would be a challenge at first, but I dont think I anticipated just how much of a challenge it would be. Everyones experience is different and many people transition really well, but I was going from a very meat-and-dairy rich diet to a totally plant-based one. It wasnt easy.

I started relying on lots of processed and packaged vegan options, and while I was technically following the rules, I knew I wasnt getting all the health benefits of the diet. I wasnt losing the weight I expected and knew I was eating too much sugar. I didnt feel that healthy, energetic glow other vegans talked about. How could I make veganism work for me and depend on real, whole foods? I started hearing about the Instant Pot. The name seemed to pop up everywhere on vegan blogs I followed and even friends talked about it. At first, I thought it was just a trend that would pass, but my friends kept using their Instant Pots and encouraging me to get one of my own.

My best friend even got one as a Christmas present, so I could see that it was great for vegan food, too. I did more research and actually learned what pressure cooking was. I was surprised to find out its actually the healthiest cooking method for vegetables and it can make grains and legumes easier to digest. For a vegan who needs to get the most nutrition out of every ingredient, thats great news. After seeing how easy the IP was to use and take care of, I was convinced to try it. It was time to put the device to the test.

When I got my IP out of the box, it reminded me immediately of a crockpot. It had the same removable stainless steel pot and heavy, electronic base with a control panel. The lid was different, however, because of the silicone seal, also known as a gasket. That was easy to fit into the lid and the IP even chimes when the lid is turned and locked into place. The first thing I made in my new device was a soup with chickpeas, coconut milk, and plenty of veggies. The recipe instructed me to cook aromatics first, which in my case were onions and garlic.

The IP has a saute setting just for this step; it gets the pot nice and hot, and you keep the lid off and basically use the IP like a skillet. When the onion and garlic were fragrant and brown, I just threw everything else in the pot and sealed it up. It only needed to pressure cook for 5 minutes or so, and then I let the pressure come down naturally. I couldnt believe how fast and easy it all was, but best of all, the soup was delicious! Since that first evening, Ive cooked so many great dishes in my Instant Pot. Whether its a soup, vegan mac and cheese, pasta, oatmeal, tofu stew, or even yogurt, everything gets done so fast and turns out tasty. I cook way more than I ever thought possible and Ive actually started seeing more of the health benefits I wanted from a vegan diet.

I have more energy, I sleep better, and people are even complimenting me on my skin. The IP has even ignited a love of cooking; its exciting to be able to use ingredients I havent been that familiar with and transform them into delicious meals even non-vegans enjoy. People are especially surprised (and delighted) when I make desserts like chocolate cake, apple crisp with granola topping, and poached fruit with maple syrup. Its not unusual for me to hear: You made that in that ? This book breaks down everything I learned about veganism and how the Instant Pot can help you thrive on a plant-based diet. It isnt the easiest decision to make, but it doesnt have to be hard, either. Healthy, vegan cooking should be fun, and you should never feel like its taking up all your time.

Eventually, many animals were domesticated for their meat and other products like eggs and milk.

As civilization formed, so did ideas about diets and animals. Many began wondering if using animals was morally right or the healthiest option for humans. Ancient Indian and eastern Mediterranean cultures embraced vegetarianism the most, though they were not what we consider vegans. Not eating any animal products didnt become a thing until the early 1800s, at least in the Western world. One of the earliest mentions of eliminating eggs and dairy along with meat can be found among Percy Bysshe Shelleys circle of friends. The romantic poet stuck to a strict diet, believing plants could cure virtually every disease.
