When people first consider the Instant Pot, they usually focus on how quickly it cooks. And yes, it often does cook meals faster than other methods, but thats not my favorite thing about it. The way I see it, its biggest value is how it saves you from being tied to the kitchen for long periods of time. Theres no need to hover over the stove or continuously stir the risotto. It frees you up to leave the kitchen and do other things while the pot takes care of the cooking.

The Instant Pot gives you some of your time back, time you can dedicate to other things that are important to youwhether thats cuddling with a loved one, binge-watching Netflix, working on an art project, or organizing your sock drawer (no judgment here!). The recipes in this book focus on fresh, whole foods. They dont require a lot of unusual ingredients, and they arent overly complicated. As someone who didnt really learn to cook until my thirties, I absolutely mean it when I say, If I can make these, so can you! These healthy dishes are based on fruits, vegetables, grains, nuts, and legumesand Im so excited to share them with you! The Instant Pot allows us to prepare our favorite meals much more quickly, and this reduced cooking time means grains, beans, and vegetables are able to retain more of their flavor and nutrientsso meals made with these ingredients are tastier and healthier. Home cooks who use the Instant Pot will also see cost savings.

In addition to the money you can save with simple steps, such as quickly cooking dried beans instead of buying canned, pressure cooking also uses less energy than stovetop and oven cooking. But above all, the Instant Pot drastically reduces the amount of time you are tethered to the kitchen. While your meal is cooking away, youre free to do whatever youd rather be doingor at least check a few items off your to-do list. Im convinced these benefits will make the Instant Pot the most essential item in your vegan kitchen. Vegan Instant Pot 101 Yes, there are a lot of buttons on the front of your Instant Pot, but dont let that overwhelm you. It is really quite easy to use, as youll soon see.

These settings have all been designed to make the busy home cooks life a little less hectic, whether youre using your Instant Pot for quick weeknight meals, parties, or meal prep. There are several models of the Instant Pot, some with more advanced functionality and options, so I encourage you to spend some quality time with the user manual for your particular version.
