Kitchen Skill Quick Reference
W hen I was growing up, my parents took mealtime very seriously. In my family there was nothing more important than the moments we spent around the table, sharing food and talking about our day. But my favorite part was helping cook the meals. I was fascinated by everythingthe sights and smells, as well as the variety of tastes and textures, that came through the kitchen.
Today my fascination with cooking continues to grow. I consider myself a food explorera job Ive been preparing for since those early days. Ingredients on our plates today come from every corner of the globe, and just as a photograph can transport us to a faraway place, so does the food on our table. I love to dive in and embrace flavors Ive never tried before and to put them together in new ways. And through these food journeys, Ive discovered that simple, delicious recipes using ingredients that are fresh and in season can transform an ordinary dinner into an amazing experience.
Mealtime should involve more than just nourishing your body. It should also be about broadening your horizons and creating memories for you and your family. Just like the explorers out in the world diving the deep oceans or traversing the frozen landscape of the North Pole, you can make amazing discoveries by having an open mind and not shying away from the unknown.
As a profession, cooking has taken me all over the world. It has connected me to people and given me lasting memories that I will cherish forever. And so, I present this book in the hopes that you will embrace the ideas and challenges between these pages and start off on the food adventure of your life.
