MENUS AND MENU PLANNING
Whether we realize it or not, whenever we cook, we plan a menu. Consider the almost unconscious pairing of soup and a sandwich, a salad and spaghetti, a stir-fry and rice. Finish with a few cookies on hand from the pantry, and your menu is complete.
For many of us, our day-to-day menu planning is based on what's in the fridge or pantry, or our particular mood. Time can also be a factorsometimes we need something in a hurry; other times, we feel like cooking something more elaborate. The seasons come into play, too. In the winter, a hot and hearty soup or stew is the only thing that satisfies. During the summer months, ripe tomatoes, corn, and watermelon almost do the menu-planning for you.
The times when the most deliberate menu planning comes into play are for holidays, special occasions, and when company's coming. Those are the times when we put the most thought into what will be served: a birthday party, a holiday dinner, a meal for special company. If you're expecting a crowd, you will need to decide if you want to serve the food or offer it buffet-style. Once you factor in the time of day and number of people, you have the information you will need in order to plan your menu.
On the following pages are some sample menus that will give you ideas on what to prepare for a variety of occasions. In several of the menus, suggestions are given for one or more starters, whether it be an appetizer, soup, or salad. You can decide if you want to include one, or two, or none at all. Some of the menus include "one-dish" entres while others incude side dishes to complete the meal. In each case a dessert suggestion is provided, although you can always take short-cuts and serve a bakery-made dessert or simply scoop up some vegan ice cream.
For those occasions when you're invited to someone's home for dinner, you may need a different strategy. First, make sure your hosts are made aware in advance that you are vegan. At that time you should be ready to provide suggestions on how they can easily accommodate your needs. Depending on the situation, you may want to offer to bring along a dish that you have prepared yourself, such as a one-dish casserole that can be popped in the oven, or perhaps a hearty rice salad to serve at room temperature. This helps take the pressure off your hosts, and ensures that you'll have something to eat.
