Cooking with CBD is a collection of meals that I enjoy making. I developed many of these recipes when my husband and I were growing medical marijuana in California, and revising them for this cookbook brought back such fond memories. Today, living in a suburb of St. Louis, we are far removed from those days of raising free-range chickens, waking up to the annoyingly inconsistent call of our rooster (his internal clock was completely off), and having an endless supply of fruit because crisp green apples, juicy red grapes, sugary figs, and wild blackberries grew all over the property.

Of course, cooking with CBDcannabidiolisnt the same as cooking with marijuana. None of the recipes in this book will get you high because CBD is for people who want to feel better without the high. Unless you choose to add THC, the only effect youll feel is relief from whatever is ailing you.

The majority of these recipes take 30 minutes or less to prepare, start to finish. They can be whipped up with minimal planning and without a long list of ingredients. And since every recipe contains CBD, every bite of every meal is sure to melt away anxiety, ease stress, and provide relief for medical conditions.

Its often said that the joy of cooking and baking is in making food for those we love, and through that daily routine we also make a lifetime of family memories. We gather in the kitchen to help or to learn or to enjoy each others company, and then we talk and share and laugh when we gather around the table to eat. I hope that you enjoy making the recipes in this book and that youre able to create many beautiful memories in the process.

Chapter 1 LEARN THE BASICS

In 2013, CNN Chief Medical Correspondent Dr. Sanjay Gupta wrote an op-ed piece titled Why I Changed My Mind on Weed, in which he apologized for not having considered marijuana to be a medication. We have been terribly and systematically misled for nearly 70 years in the United States, and I apologize for my own role in that, he said. This is the same neurosurgeon who had penned the article Why I Would Vote No on Pot for TIME Magazine in 2009.

He discovered that hed been misled, Gupta explained, while he was compiling footage for his documentary series Weed. He began reading scientific studies published in scholarly medical journals, all of which contradicted the Drug Enforcement Agencys claim that cannabis is one of the most dangerous drugs on the planet, with no accepted medical use. He also spoke with doctors and patients who bore witness to the near-miraculous healing power of medical marijuana.

In September 2019, Guptas fifth documentary on cannabis (Weed 5) aired on CNN, and he commemorated the occasion with another opinion pieceDr. Sanjay Gupta on Medical Marijuana: We Are in an Age of Wisdom, but Also an Age of Foolishness. Gupta stated: Make no mistake: Cannabis is a medicine. At times, it can heal when nothing else can. Denying people this substance represents a moral issue just as much as a medical one.

Gupta cited the case of Charlotte Figi, who had suffered from frequent seizures since she was three months old, lasting two to five hours. At age two and a half she was diagnosed with Dravet syndrome, a rare seizure disorder. By the time she was five, Charlotte could no longer walk or talk and couldnt even eat because of her seizures. She was having 300 grand mal seizures a week, and they were causing her heart to stop.

TERMS TO KNOW

CANNABINOIDS Chemical components of the cannabis plant. Also known as phytocompounds (or compounds produced by a plant).

CBD Cannabidiol, the cannabinoid in cannabis plants with medicinal properties but no psychedelic effects.

THC Tetrahydrocannabinol, the psychoactive chemical in marijuana plants.

HEMP Cannabis plant high in CBD but containing little THC (0.3% or less).

MARIJUANA Cannabis plant containing more than 0.3% THC.

Doctors didnt expect Charlotte to live past her eighth birthday. There was nothing left to doexcept to turn to the one medication no doctor at the time considered prescribing for a child: cannabis. Charlottes parents had heard about CBD-dominant cannabis strains that were effective in treating Dravet syndrome. Eventually the Figis found a doctor in Colorado who granted Charlotte access to medical marijuana. As a five-year-old, she became the states youngest medical marijuana patient.

The results were essentially instant; after her mother administered a few drops of cannabis oil on Charlottes tongue, Charlotte was seizure-free for an hourand then the next hourand then the following seven days. By age six she was thriving: walking, riding a bicycle, feeding herself, talking. On average she experienced only two or three seizures a month, despite being off all pharmaceutical seizure medications. She took CBD oil twice a day in her food. Thats all she needed.
