Dedication
This book is dedicated in loving memory, as all of my books are, to my parents, Jerome and Agnes McAndrews. My mother had the inspiring ability to feed our family well by taking often very basic ingredients and transforming them into delicious meals that satisfied the soul as well as the tummy. She used her infinite knowledge of the foods available to her, along with the few appliances she had (including her pressure cooker), to create dishes that she was proud to serve to anyone sharing our table. And I know my father admired the practicality of that old pressure cooker as well as her creativity in using it.
I hope you enjoy using your much-improved pressure cooker to prepare the recipes in this book. I give much of the credit for their creation to my parents, from whom I inherited both my mothers artistic talents and my fathers practical traits.
My mother always found a few minutes in a very busy day to write her beautiful poems. This is one I have always liked and hope you will, too.
