This book is dedicated in loving memory to my parents, Jerome and Agnes McAndrews. While double-sided electric contact grills werent even thought of in their day, Im sure both Mom and Daddy would be the first to sing their praises! After all, it would be one more venue for Moms cooking creativity, and Daddy would have been more than pleased with how practical and cost-efficient these grills are.
Mom wrote poems her entire adult lifetime. Her subjects were as varied as my many cookbooks are! So it should come as no surprise that I always seem to find just the right poem of hers to match each of my cookbooks. While cooking with an electric grill can speed up our time in the kitchen, I hope that you remember Moms words from this poem the next time youre upset when someone or something isnt going as fast as youd like.
Hurry Hurry Hurry
Dear Lord, help me to have patience with those who want to talk.
And allow me to assist others who now find it hard to walk.
I know You have a busy schedule, but You always find the time
To listen when I pray about the problems of others and mine.
Everyone seems to be in such a hurrytoo busy to stop for a while.
Many are too rushed to speak, let alone to try to share a smile.
Now that I am getting older, my feet falter when I walk.
I know that I often must think first for the words when I want to talk.
So please Dear Lord, help me be kinder for I dont mean to scold.
I know how it feels to be hurried by others now that I am growing old.

Turning Up the Heatin Search of Your Best Self
Who was it who said, If you cant stand the heat, stay out of the kitchen? Hmm, Ill have to check on that and get back to you. But Id like to offer a follow-up comment to that remark: If youve got to be in the kitchen, find an easier way to handle the heat!
Most of us have to spend some time preparing meals every day, for our families in many cases, and certainly for ourselves. We could choose to dine on microwaved frozen entres for breakfast, lunch, and dinner, thanks to a host of manufacturers whove loaded our supermarket shelves with choices. But if youre one of the many who prefer home-cooked to defrosted most of the time, welcome to the club! Were busy, and when weve got little time on our hands, it becomes way too easy to eat in a way that adds to stress instead of helping us cope with it better.
The desire is there, thoughIve seen and heard it wherever Ive traveled across the nation. We want to make healthy eating choices, but with less time than ever before to get food on the table, we too often opt for handy takeout meals or heat up leftovers from the night before. Heres a little test: If youve got refrigerator magnets holding up a dozen delivery menus and your before picture looks a little too close to how you feel right now, help is on the way! All you need is a little counter space, an empty outlet, and a willingness to make a few changes in your kitchen.
The Appliance Glut
Lets talk for a moment about the twenty-first century American kitchen and its parade of machines designed to make life easyand to make food delectable and quickly delivered. Whether you live in a tiny city apartment or a roomy farmhouse, a simple cottage or a four-bedroom house, your kitchen likely features a variety of appliances. Some, like the coffeemaker, you may use every single day. Others, like your bread machine or salad spinner, may be covered with a bit of dust and havent been called into service for months. They seemed like a great idea at the time you bought them on sale or received them as gifts, but reality soon intervened, and far too many of our timesaving kitchen tools turn out to be underutilized counter hogs.
Remember, I cook and create recipes for a living, so I experience this problem as much as anyone. And even though my current kitchen is much larger than the Pullman kitchen I labored in during twenty-plus years of marriage and while I raised my three children, I still regularly ask myself whether I really need a particular piece of kitchen equipment. Does that blender still earn its keep? Do I really want and need an electric carving knife? (Yes to the first, no to the second!)
One of my most recent cookbooks, which was dedicated to celebrating the slow cooker revival, meant making space for one and using it often. I also still use my microwave and toaster oven regularly, so those can stay where they are. But when, along with millions of Americans, I acquired a double-sided electric contact grillthe industry name for such machines as the George Foreman and Hamilton Beach grillit became my passion and my mission to discover and perfect all kinds of recipes inspired by its unique talents.
Why Grill?
Grilling isnt a new cooking method; its been around for centuries. But most of us associated grilling with barbecuing, an activity that took place outsideon porches and patios and in grassy backyards. These outdoor grills required gas or charcoal briquets, cleanup was time-consuming, and heaven forbid the skies erupted in rain while your burgers were browning! If you didnt have the option of cooking outdoors, you could attempt what some intrepid apartment dwellers tried and grill on a rooftop or fire escape using a hibachi. Unfortunately, these methods proved unreliable, messy, and even slightly dangerous.
