This cookbook is dedicated in loving memory to my parents, Jerome and Agnes McAndrews. All the years I was growing up, we lived in a huge old house in Lost Nation, Iowa, where the kitchen was big, but the equipment and storage space were sparse, at best. So I learned firsthand from Mom how to do much with little by stirring in a helping of creativitybe it ingredients or equipment. Daddy was always the analytical thinker and taught my sisters and me to think outside the box long before it was popular to do so. I like to think that Im putting both Moms and Daddys talents to good use in these ultra-easy make do recipes.
As usual, my mother had the perfect poem for this collection of recipes among the many, many poems she wrote over the years. It really doesnt matter if youre cooking in a motor home, on a boat, while tailgating or picnickingor even trying to get by in a tiny, cramped apartment galley kitchenI think youll enjoy both my recipes and Moms words.
The Supreme Architect
It isnt so much the house that counts as the people who live inside.
For houses can burn and tumble down or be swept away with the tide.
The furniture, too, can go out of style and become shabby-looking over time.
But, abode shouldnt matter to those in the house; rather, its keeping the soul sublime.

All these years and all those recipesShirleys probably typed over ten thousand recipes for me, and Ritas tested at least five thousand of themand they still smile when they come to work here at Timber Ridge Farm!
Coleen OSheamy agent. When I told Coleen last year that I was ready to write another book, she made sure everything happened so that I could. Shes been doing that for me ever since 1993, when we first met over a piece of my pie!

On the RoadAnd on the Path to Better Health
Im sure youve noticed the trend, just as I have. Were a nation on the move, eager to experience all that our beautiful country has to offer. Given a choice between staying home and going on the road, we joyfully gas up the van, stock the RV, stuff the tent into its duffel bag, shine the brass on the boat, and spread out the maps on the nearest table or car trunk. When the sun comes up (or often hours before), were rarin to go, seat belts buckled, gaze fixed on the highway ahead, exhilarated by the possibilities of seeing someplace new and meeting strangers wholl soon become friends.
I know this as well as anyone, because my husband, Cliff, and I have spent untold hours, days, even weeks on the road during the past ten years. Weve toured to promote my cookbooks, driven thousands of miles to visit with our kids and welcome our grandkids, and been thrilled to come face-to-face with the inspiring natural beauty of this land of ours. Even before we began traveling together, Cliff racked up a million miles or more in his years working as a long-distance trucker. So I can speak with authority about this. We Lunds know a lot about living life at sixty-five miles an hour!
