Bill Kim, chef-author

Born in Seoul, South Korea, award-winning chef Bill Kim immigrated to the United States at age seven and found himself to be one of the few Korean kids in his Chicago school. He scrambled to assimilate, walking the fine line between fitting in with America and with his Korean family. His first formal kitchen dutyroasting sesame seeds and grinding them with a mortar and pestle for his mothers kimchi recipesparked his interest in pursuing a culinary career that eventually took him to chef positions in variety of restaurants, including Charlie Trotters, Bouley Bakery, and Susanna Foo.

After spending years perfecting his skills alongside the best in the industry, Kim left fine dining in 2008 to venture out on his own, creating his own imaginative Asian-inspired cuisine with three highly acclaimed Chicago restaurants, Urbanbelly, which features creative and soul-satisfying noodle, dumpling, and rice dishes; bellyQ, a modern Asian barbecue concept; and Belly Shack, a tribute to his Korean roots and his wifes Puerto Rican heritage. Today, he is recognized as a pioneer in the movement of fine-dining chefs introducing casual concepts. Partnered with Cornerstone Restaurant Group and Michael Jordan, Kim reimagines Asian barbecue, amplifying it into a creatively modern and delicious interactive dining experience.
