Our Story
Its amazing how seemingly unrelated events, small suggestions, and giant leaps of faith can bring you to a point in your life you never would have imagined. Ive been a vegetarian for the past sixteen years, but it wasnt until I made the decision to become vegan and gluten-free that I realized how many processed foods I was consumingfar from whole food and worlds away from plant-based. The decision to follow a vegan, gluten-free, and whole food diet really started with my children, my two little girls who make my husband and me feel like the luckiest people alive.
In September 2009 we had our first daughter, Meadow. It was a difficult journey from the get-go. After a pregnancy riddled with complications, Meadow was born with multiple gastrointestinal issues, including a milk-protein allergy, acid reflux, and delayed gastric emptying. It was heartrending to see her vomit and refuse food to the point of dehydration on an almost daily basis. Knowing what to feed her was a struggle and a constant point of stress for the whole family.
In May 2011, while living in Las Vegas, we had our second daughter, Olive, after another difficult pregnancy. Olive is my miracle baby. Born with restricted growth (meaning she was much smaller than she should have been), she was quickly diagnosed with a milk-protein allergy, acid reflux, malabsorption, and failure to thrive. With no local family support and few friends willing to help us, we decided it was time to move back to our home state of Texas, where we could get the support we desperately needed. We packed up and started our trek to Dallasacross the desertthat summer. In hindsight, a four-day road trip through triple-digit temperatures with two sick babies in the backseat was probably not the best idea. Before we made it to Dallas, Olive stopped eating. In desperation, Marcus put Olive and me on a plane to fly the rest of the way.
