Thanks so much for picking up and taking a look through this book! You may be wondering who the heck I am, so let me introduce myself: my name is Melissa, and Im frugal. Actually, no need to be polite, Im more than just frugal; Im stingy. I was born this way.When I was eleven years old, I decided that animal agriculture sucked. Luckily, my parents were, like, pretty cool, I guess (dont tell them I said that) and catered to my new vegetarian diet, probably thinking Id grow out of it. Not only did I not grow out of it, but as I learned more about eggs and dairy, I decided to ditch them, too.Now, I combine two of my most identifying character traits, stinginess and veganism, to write my food blog The Stingy Vegan (clever, eh?).Without a doubt, the most popular recipes on my blog are the ones that can be prepared in the shortest amount of time. I get it. On a weeknight after a long day at work, no one wants to spend an hour just waiting for the tofu to press and marinate. Unfortunately, so many vegan recipes, while no doubt delicious, are ridiculously time-consuming and weirdly complicated.On the other end of the spectrum are cheap and quick vegan recipes that are so simple that they end up being bland and boring. In this book, I wanted to write recipes for you that are not only quick to prepare but also make good use of a basic repertoire of spices, seasonings and cooking techniques to infuse maximum flavor into simple and easily accessible ingredients.I hope you enjoy the recipes Ive created for you here. While most of them are entirely new, Ive also adapted a few of my absolute favorites to make them even cheaper, faster and easier. Do feel free to reach out to me via my blog with any questions or comments you may have!A note about the recipes in this book: I am an ethical vegan (vegan for the animals first). I do not follow a whole food, oil-free, plant-based diet. Recipes include white rice, all-purpose flour and sugar because these ingredients are cheaper. You can saut your vegetables in water or vegetable stock instead of oil, if you prefer. Whole grains can be substituted in many recipes, but the cooking time will need to be increased. Please check online for which brands of sugar are vegan-friendly (not filtered with bone char) before purchasing. And soy does not cause man-boobs.

Theres a pervasive myth that a vegan diet is not only more expensive and complicated than the standard American diet, but that you need to do all your grocery shopping in special organic-only health food stores or from the dedicated vegetarian fridge at your local supermarket (the but my supermarket doesnt have vegan options excuse is another one that drives me up the wall).Its easy to see how many people perceive veganism as expensive. Especially for those who are transitioning from the standard American diet toward a plant-based one, the fake ground meat crumbles and vegan cheeses are the easy way to eat less meat while still cooking your favorite and familiar recipes. Its true, these products are expensive, and if you base your diet around them, the costs will quickly add up.Whats not true, however, is that your supermarket doesnt have vegan options. The pillars of a healthy, hearty and delicious vegan diet are beans, rice and pasta (and maybe nutritional yeast and bananas).
