Dedication
To my children: Will, Annie, and Taft; their spouses: Kelly, Terry, and Kara; and to my grandchildren: Molly Catherine, Anna Flynn, Jilli, Jesse, and Emma. The refrigerators were bulging, tastings were constant, and you never knew what to expect when you walked into the kitchen... except one thing: a tight squeeze from me every single time. You make me happier than youll ever imagine.
To my husband, Greg: You are a true sport! You deal with the chaos, the commotion, the craziness of my dither days, and since you obviously know how happy it makes me, you just take a deep breath and hold on! Thanks for holding on... so tight!!
Its fun, isnt it!
Acknowledgments
To Melanie McKibbin, my business manager, who kept me organized, took my piles of to do lists and did them herself (sometimes voluntarily), and knew when to transform what I was trying to say into complete sentences.
To Sylvia Vollmer, my very positive, very conscientious assistant, who learned to read my chicken scratch, read my mind, and thoroughly enjoy every taste test, no matter what time it was or how many tastings were conducted that day.
To Abe Ogden, Director of Book Publishing; Victor Van Beuren, Acquisitions Editor; and Rebekah Renshaw, my go-to-for-everything editor, thank you for being there for me... always, always.
I love what I do and you definitely are a part of that fun!

Table of Contents
(Carb-controlled recipes for breakfast, lunch, dinner, snacks, and dessert containing 15 grams of carbohydrates per serving)
This easy-fix, easy-to-follow cookbook contains 150 recipes with the same amount of carbohydrates in every single recipe... only 15 grams of carbohydrates or LESS in each!
This book is a great tool to help portion control and control the intake of carbs. Its important for people with diabetes to keep up with the amount of carbohydrates they consume, but it can be a confusing task. Life brings on many demands. Adding one more, even though its important, can be overwhelming.
Consistency, on the other hand, brings a sense of calm in a stressful world. It also brings a sense of sensibility by controlling food portions and having absolutely no question of the amount of carbs consumed!
Cookbooks for people with diabetes have helpful recipes that always include the amount of carbohydrates per serving. But this cookbook goes one step further and offers uniformity in carbohydrate content. This means all the recipes have the same amount of carbs no matter what recipe you choose to make in the entire book!
Carbohydrate foods are a very important part of good nutrition, but it is the carbohydrate in foods that raise your blood sugar the most. All carbohydrates, no matter what the source, can raise your blood glucose if you eat too much at one time. Counting carbohydrates can help you gain better control of your blood sugar levels; spacing your carbohydrate foods throughout the day helps to control your blood glucose levels, too.
In this book, you will also find a listing of alternative 15-gram carb choices for those days when a plain-and-basic food option is all thats needed. This will help you have even more choices and keep you on track... easily! Be sure to keep some of these items on hand at all times to fall back on at the end of a busy day.
As with all of my books, my goal is to provide easy-to-make recipes with familiar ingredients that you can find in your local grocery store. Cooks tips, helpful short-cut techniques, total yields, and serving size amounts will make you feel at ease... and informed. The recipes are easy and packed with flavor with easily obtainable, familiar ingredients to please the entire family.
I wanted to give you a tool to use that will bring some calm into your life and enjoyment to your meals... again! Hope youre hungry!!Nancy S. Hughes
So how can you enjoy the carbs youve always loved and stay on track?
... the secrets in the stretch!
Trick your taste buds and your eyes by incorporating higher-carb ingredients with lower carbs. Youll get that satisfying feeling that comes from higher-carb ingredients without over-carbing when you add bulk with the lower carbs! This mixing of carbs opens up a whole new chapter of food combinations that pop with color, texture, flavor, and carb fulfillment! Not only are you controlling your carbs in this cookbook, but you are increasing your vegetable and fruit intake!
