To my sister, Judy Wilcox. You carved your own path through trial and error sometimes, but you finally found a safe way to eat. I learned a lot from you, though (as the younger sister) I never really wanted to actually admit it! My Story
In February 2007, I was biopsy diagnosed with celiac disease. My life changed dramatically with this diagnosis, as I now have to follow a strict gluten-free diet. I went from being a registered dietitian (RD) counseling patients on what to eat, to being the patient wondering what I could eat. I remember it vividly: sitting in my office and thinking that my Italian Christmas celebrations full of lasagna, eggplant Parmesan, biscotti, and cookies would never be the same. Even though I was an RD, I had a lot to learn about the gluten-free diet. My specialty was diabetes, so I knew much more about diabetes and healthy carbohydrates than celiac disease and gluten. Five years later, Ive become very accustomed to eating gluten-free foods at home, restaurants, parties, and when traveling.
