Being diagnosed with celiac disease is a scary experience. I know this firsthand because I was diagnosed with it almost 10 years ago. When the doctor informed me of my diagnoses, I was dumbfounded. I had never even heard of celiac disease until that day. I had no idea where to turn. While the doctor did give me some pamphlets on what the disease was and what foods to avoid, there really wasnt a whole lot of information. So I set out to learn all I could about the disease. After all, Im a baker by heart and there was no way I was going to give up one of the passions in my life because of a stupid disease. Thats when I started to make my own gluten-free recipes. I spent years perfected my favorite recipes so they didnt contain any gluten but still tasted amazing. And that is what you will find in this book. Twenty-five of my favorite gluten-free recipes that taste just as good, if not better, then their gluten-filled counterparts.

Chapter 1 Breakfast Recipes
Banana Pancakes

This gluten-free breakfast recipe features coconut flour and can be topped with your favorite fruit, such as strawberries or blueberries.

Serving: 6

Total Time: 20 to 25 minutes

Ingredients:

3/4 cups water, warm
cup ground flaxseed
1 teaspoon of baking powder
cup coconut flour
tablespoon vanilla extract
1 cups almond milk, unsweetened
2 ripe bananas, peeled and sliced

Directions:

Step 1: Preheat a skillet on medium heat.

Step 2: In a small bowl, whisk together the warm water and flaxseed. Set the bowl to the side and let rest for at least 5 minutes.

Step 3: Sift together the baking powder, coconut flour and salt in a medium sized bowl. Stir in the vanilla extract and almond milk. Add the flaxseed mixture and stir until smooth.

Step 4: Place about cup of the batter onto the preheated skillet. Press some sliced bananas into the batter. Let the batter cook until the bottom is lightly brown. Flip it over and cook the other side for a minute or two.

Total Time: 25 minutes

Ingredients:

6 large eggs
3 avocadoes, halved and pits removed
1 cup shredded cheese
3 tablespoons chives, chopped
Salt, to taste
Black pepper, to taste

Directions:

Step 1: Preheat oven to 425-degrees.

Step 2: Scoop two tablespoons of flesh out of middle of each avocado half. Lay the avocado cut side up on a baking sheet.

Step 3: Crack an egg into the depression made in each avocado. Season with a bit of salt and pepper. Sprinkle some shredded cheese over the top.

Step 4: Place the baking sheet in the oven and bake for about 18 minutes.

Step 5: Let cool before placing the avocadoes on plates and garnishing with the chives.

Breakfast Frittatas

Ingredients:

3 teaspoons coconut oil
1 red bell pepper, sliced
3 cups baby bella mushrooms, sliced
1 garlic clove, minced
8 large eggs
4 ounces baby spinach, chopped
cup asiago cheese, grated
2 tablespoons almond milk, unsweetened
Salt, to taste
Black pepper, to taste

Directions:

Step 1: Whisk the eggs together until well mixed. Set to the side for the moment.

Step 2: Add the coconut oil to a large skillet. Place the skillet on the stove over medium heat.

Step 3: Cook the mushrooms in the skillet for about 5 minutes. Add the garlic and red bell pepper and stir. Season the vegetables with salt and pepper, and cook for 2 minutes.

Step 4: Stir in the chopped spinach and cook for an additional minute before removing the skillet from the heat.

Step 5: Pour the almond milk into the eggs from Step 1 and beat well. Season the mixture with salt and pepper. Add the cooked vegetables and the cheese, and stir.

Step 6: Place the skillet back on the stove and heat until hot. Pour the egg mixture onto the heated skillet and cook for about 5 minutes while stirring.

Step 7: Reduce the heat to low and place the cover on the skillet. Let cook for 10 minutes. Make sure to shake the pan every 2 minutes or so during the cooking process.

Step 8: Let the broiler on the oven preheat for several minutes before transferring the skillet from the stove to the oven. Let broil for 2 minutes.

Step 9: Carefully remove the skillet from the oven and let cool before serving.

2 tablespoons flaxseed, ground
2/3 cup white rice flour
cup tapioca starch
cup buckwheat flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
teaspoon salt
teaspoon baking powder
1 cups pumpkin puree
cup coconut oil, melted
cup water, cold
cups pure maple syrup
1/3 cup almonds, finely chopped

Directions:

Step 1: Preheat oven to 325-degrees. Line a muffin pan with lines. Set to the side for the moment.
