INTRODUCTION Im a Celiac so I live a Gluten Free lifestyle. When I was first diagnosed I had no idea what I was going to eat, where to shop, or really how to cook. Two weeks after going Gluten Free I was a new person. I could think straight, I wasnt always looking for a bathroom, and the bloating was gone just to list a few of the many improvements.
If you were just diagnosed and are starting your Gluten Free journey know you are not alone and you can do this. There is a learning process so be patient and know you will have setbacks along the way. My hope is that this book gives you knowledge, hope and realistic recipes you can create on your own. YOU ARE NOT ALONE Research states that 1 in 133 Americans have Celiac Disease. Granted, only a small percentage, around 17%, are actually diagnosed. There are great resources online at CeliacCentral.org and Celiac.org that give you more facts and figures about the disease.
None of us can do this on our own. Eating Gluten Free is hard. It takes time and practice. Find a Gluten Free community you can be a part of, join a meet-up group, a support group, or join an online community. Find people who can walk this path with you. Help and encourage one another.
Find someone that is Gluten Free in your area and take them to lunch. Pick their brain and ask all the questions you can. If you are close to a Gluten Free expoGO! The ticket price is way cheaper than going to the health food store and buying all the products to try on your own. It is also super freeing to be in a room where you can eat everything because it is all Gluten Free. If there are other foods you have to avoid, such as soy, dairy, or egg, a number of vendors can also accommodate those needs. GLUTEN AFFECTS US ALL DIFFERENTLY
